Are you looking at reducing your meat intake? Fantastic!
Just remember it is important to ensure that you are getting adequate protein, iron and B vitamins, amongst other things, while following a meat-free diet. Without all the necessary nutrients you will experience fatigue and become run down.
One of my favourite salads is Cypriot Grain salad! It is perfect as a meat-free option as it contains so many vital nutrients. It is also made using simple ingredients that are packed full of flavour!
Here’s the recipe:
1/2 cup freekeh (green wheat - available at Moontree Health Foods)
1/2 cup puy lentils
1/2 red onion, finely diced
2 tbsp each of sunflower seeds, pepitas and pine nuts
2 bunches of flat leaf parsley, roughly chopped
2 tomatoes, roughly chopped
2 lemons, juiced
1 tbsp extra virgin olive oil
Cook the freekeh in boiling water for 10 minutes. Add the lentils and continue to cook for 25-30 minutes or until tender.
Meanwhile, combine all of the remaining ingredients in a large bowl.
When the freekeh and lentils are cooked, drain and rinse under cold water. Add to the other ingredients and mix well.
We love to eat ours with felafels, lamb kofta or zucchini fritters!
