Aleppo-Maple Glazed Brussels Sprouts - caramelized Brussels sprouts in a maple glaze spiked with a hint of Aleppo peppers. Soooo good, I can't even tell you. I long for Brussels sprouts season all year, waiting for my chance to make these babies!

Here's how to make them:
3/4 pounds Brussels sprouts
2 Tablespoons unsalted butter, plus a little more if needed
2 Tablespoons olive oil, plus a little more if needed
1/2 teaspoon coarse salt, plus more if needed to taste
1/4 teaspoon ground black pepper
1 teaspoon Aleppo pepper (see notes)
1 teaspoon maple syrup
3/4 cup lightly salted chicken, turkey or vegetable stock
- Cut each sprout in half vertically down through the stem (the tiniest sprouts don't need to be cut).
- Heat the butter and olive oil together in a large skillet over medium-high heat. Add the Brussels sprouts in one layer, preferably cut-side down, to brown in the hot oil for about 1-2 minutes. Work in batches if needed to allow all the sprouts to brown (and if so, you may need to add more butter and olive oil to the pan before the second batch). Season the sprouts with the salt, pepper and Aleppo pepper, and turn them to brown on the other side for another 1-2 minutes.
- While the Brussels sprouts are browning, stir the maple syrup into the stock. When sprouts have finished browning, pour the stock mixture into the pan. Stir gently, allowing it to come to a boil, then cover. Turn the heat to medium-low, put the lid on and simmer for 2-4 minutes, until sprouts are tender. (Don't overcook: small sprouts will be done in 2 minutes, larger sprouts will take a little longer.)
- Remove the lid and gently stir the sprouts around to be sure they are evenly coated with the liquid. Turn the heat to high for 1-2 minutes to allow the liquid to reduce to a glaze, as you shake the pan occasionally. - Taste and add another pinch of salt if needed. Serve with the glazed sauce.
