Throw this protein and nutrient packed soup together with your pantry staples. It's super Clean and Delish! 💁Ingredients:
3 cloves garlic
3cm knob fresh ginger
3cm knob fresh turmeric
1 heaped tbsp cumin seeds
1 heaped tbsp coriander seeds
6 whole cloves
1 tsp ground cinnamon OR 1/2 stick
6 whole black pepper corns
1 heaped tbsp tomato paste
1 400ml can coconut cream
2 large sweet potatoes
1 large carrot
1 large apple
1 can brown lentils, rinsed
Pink salt, to taste
1 litre Vegetable stock or water (I used veggie stock paste made in my Thermomix with enough water to cover.
Blend whole spices, onion, garlic, ginger and turmeric with a splash of coconut cream in a high power blender into a smooth curry paste- whole spices give the best flavour, but if you can replace with ground spices and chop ingredients instead if you wish.
Gently fry in a large saucepan for a few minutes, stirring consistently. Add tomato paste and stir for another minute.
Add remaining ingredients with enough liquid to just cover the veg. Simmer until veg is tender. Use a stab blender or blender until smooth.
Add some extra crunch and protein with toasted spiced cashews- toss in a pan with your fav spices until toasted lightly. I used coriander, cumin, salt flakes and smoked paprika powder with a little olive oil.
Add spinach, kale or coriander at the end of blending for extra greens.
