Akamaru Shinaji 赤丸新味 is Ippudo's original tonkotsu broth with miso paste & garlic oil. The garlic taste is pretty subtle so don't worry about dragon breath 🐲. Served with 2 slices of pork, kikurage (aka black fungus), spring onions, bean sprouts, & a whole egg. I am not the most discerning with ramen, & I also technically didn't come here by choice... But I felt it had all the elements of a good bowl of comforting ramen. Firm noodles, flavourful soup, flowy egg, & ingredients in balanced quantities.
At #IppudoSG, there are 5 levels of hardness for the noodles: Very Soft, Soft, Medium, Hard, Very Hard. I always opt for my noodles to be Hard, & today I found out that this is what Ippudo actually recommends. #coolstorybro.
