One-Pan Summer Vegetables & Sausage
Calories: 326 per serving * use any sausage you like - any vegetables - any spices! Customize!
• 2 Tbsp olive oil
• 1/2 tsp garlic powder
• 1 tsp kosher salt
• fresh ground pepper
• Two 14 oz chicken sausages (organic), sliced
• 1 large sweet yellow onion, chopped
• 2 cloves garlic, minced
• 1/2 yellow bell pepper, 1/2 green pepper, 1/2 red pepper diced
• 2 zucchinis, diced
• 1 lb baby red or yellow potatoes, quartered
• rosemary / thyme
Preheat oven to 375°F.
Toss everything in a bowl with oil & seasonings. Layer mixture on baking sheet. Bake uncovered for one hour, stirring veggies & sausage halfway through.
