It's Monday and a little dreary here in PA today. Not quite sure it wants to rain, and kind of a good day for a movie and a good meal. Naturally, at 11 AM this morning, I knew what I had to have for dinner. French Onion Soup.
What could be better? Start with onions....lots and lots of onions. Let them sweat down into a gorgeous caramelized oniony pot of goodness. Add some beef stock and simmer away. Season with salt and pepper, maybe a bay leaf. 🍜🍜 (I know that traditionally this has wine or sherry in the recipe. But I usually don't have any in my pantry and I find this just as fabulous without... Sorry, Julia Child.) Ladle the soup into a bowl. Top with your favorite bread (gkuten-free bread works too and even better if your bread is a little stale). And don't forget the best part. Thee cheese!! I mix a sharp Irish cheddar with gruyere for a nice, salty, nutty mound of cheesey wonder! 🧀🧀 Pop that bowl into the oven and let the cheese melt.
This takes a little time to prep because the onions take some time to sweat down. It's so worth the time.
Cook's Tip: Put your onions in the fridge for a little while before cutting. You are less likely to cry while cutting your onions.
