* 1 avocado
* 40ml extra virgin olive oil
* 3 tbsp lime juice
* 2 tbsp water
* 1 tbsp apple cider vinegar
* 1 tsp garlic powder
* 1 tsp oregano * 1 tsp salt & pepper
* 1/2 cup coriander -

1. Slice the avocados.
2. Slice the salmon. Arrange better than my arrangement.
3. Mix the remaining ingredients in a bowl and whisk. Alternatively, mix the ingredients with a food processor and pulse until well blended.

* 250g mince beef
* 50g mozzarella cheese
* 10ml extra virgin olive oil
* 1 garlic clove
* 1/2 tsp paprika powder
* 1/2 tsp ground cumin
* 1/2 chili powder
* Lettuce
* Salt & pepper
* Pico de gallo*

* 600g tomatoes, seeded and chopped * 1 onion
* 5 tbsp coriander leaves
* 3 tbsp lime juice * 2 chillies, seeded and minced
* Salt & pepper

1. Add all the ingredients to a bowl and combine.

1. Preheat oven to 200Β°C.
2. Cut the peppers in half. Remove the seeds and place the peppers in a greased baking dish.
3. Heat olive oil in a frying pan and sautΓ© the onions and garlic. Add the mince beef and fry until cooked.
4. Season with paprika, cumin, chili powder, salt & pepper.
5. Stuff the peppers with mince beef. Top the cheese and drizzle olive oil on top of the peppers.
6. Bake in the oven for 20-25 minutes.
7. Top with lettuce and pico de gallo.
