RECIPE 👉 Blueberry Protein Muffffins👇
Finally sharing my recipe for last weeks muffins! Warning, it’s difficult to restrain from eating the whole batch 💁♀️ These are a great snack idea, and a super healthy version of your normal blueberry muffin with all the taste (and macro friendly for you trackers) Recipe makes 12 mini muffins: .
1 Apple sliced
30g Protein Powder (I used salted caramel)
100g Greek Yogurt
25g Coconut Oil
200ml Milk (use alternative energy if desired)
Dash of Baking Power, Cinnamon & Vanilla Stevia (or extract) .
Oven to 175. Cook the apple slices for a few minutes in simmering water and drain. Add these to a bowl with the eggs, coconut oil, blueberries, yogurt, milk and vanilla stevia. Mix the oats, protein and cinnamon/baking powder in another. Grease a bun/muffin tin with coconut oil. Mix both bowls together well to create batter, divide into baking tray, and bake for around 20/25 minutes. .
