Don’t wait for Monday! Gym time! 🏋🏽‍♀️

These super greens came in my @abelandcole box last week & I’m just getting round to finishing the last of them today. As I’m still feeling poorly I’m trying to cram as many varieties of fruit & veg into my diet to give my body a helping hand on the vitamin, mineral & phytonutrient front (plant chemicals that we get from our food) because as much as I want a massive pie right now, that in itself will not help my body to recover quicker.

I know kale can be a bit of a marmite food (@thefoodbotherer I’m looking at you ‘devil’s lettuce’) but if you can tolerate it is full of vitamins A, C & K (side note: vitamin K is fat-soluble so add a small dollop of fat or oil when eating this or your body won’t be able to use the vitamin K), fibre & small amounts of potassium, calcium & magnesium which your body uses for blood pressure regulation, bone strength & nervous system function respectively.

If you hate the idea of eating kale as you’ve had a bad experience in the past (it can be quite tough to chew raw) why not try: 1. Hiding it in a soup (it’ll go nice & soft & you prob won’t even notice it if you blend it all up), 2. Wilt it using a vinegar dressing (massage the dressing into the kale for a couple of mins, leave for 5 mins & the leaves will transform into something more edible) then eat as a salad or side, 3. Bake into crisps (tear the leaves, brush lightly with oil, stick in a medium heat oven & bake until crispy - but watch carefully for burning!)

I’m off to make some @iquitsugar banana bread granola for a late brekkie then it’s on the study & chill train for me. Did someone say #bakeoff catch up? 🎂

You can boil the quinoa and refrigerate for up to 3 days. In the morning you can warm up a small amount and enjoy with fruit, nuts and yoghurt. I cook the quinoa with oatmeal and I like to enhance it with almond butter and cinnamon. Enojy it 😘⠀

Es muss schnell gehen, soll gesund sein, glutenfrei und abnehmen willst du auch? 😃 Dann ist morgens ein leckerer Quinoabrei 🥣 genau das richtige für dich. Du kannst den Quinoa vorkochen und bis zu 3 Tage im Kühlschrank aufbewahren. Morgens kannst du eine kleine Menge aufwärmen und mit Obst, Nüssen und Joghurt geniessen. Ich koche den Quinoa mit Hafermilch und verfeinere ihn gerne mit Mandelmus und Zimt. Lass es dir schmecken 😘⠀

A Broccoli and Kale Pizza Base?

In a food processor, process 300g broccoli and 1.5 cups kale leaves. Add 1.5 cups almond meal (or oats/quinoa for #nutfree ), 4 tbs nutritional yeast flakes (or 30g shaved Parmesan), 2 eggs, salt and pepper. Flatten onto a baking paper lined tray. Bake for 20 minutes at 180 degrees.

Meanwhile, grab your food processor and blitz up a sauce, with 1 large tomato, 1 garlic clove, 1 handful fresh herbs, 2-3 tablespoons tomato paste, 1 tablespoon apple cider vinegar, 1/2 tablespoon jalapeño (optional), and a little salt and pepper.

Once your base is done, top with homemade sauce and all your favourite toppings. Bake again for 10 minutes.
