Here's the final product of the invert sugar I made yesterday. It's an undeniably finicky and time-consuming process, but I'm so excited to get some of that alluring amber color and caramelized dried fruit flavor into an Old Ale tomorrow. Hopefully the process was worth it.

This past week spent at @sweetritual with Amelia, Valerie and everybody else has been a life-changing, impactful and elucidatory experience. So these are actually rather interesting. They aren't as sour as I thought they may be, but they are rather sweet once you get past the invert sugar layer. The texture is more like a jelly than the usual blue gummy sharks, and reminds me much more of the fruit slices jelly candies. All and all a 4 out 5, just because I wish they were a little more sour a bit longer. To produce 'Invert sugar', an acid or the enzyme invertase is added to a syrup made with refined cane or beet sugar and water.
