Hi everyone! So those of you that know me or have been following me for a while will know how much I struggle with my tummy issues, I get severe bloating, (not in this pic as this before I ate or drank, you should see my tummy now πŸ˜‚) I get nausea sometimes even sick, I sometimes struggle with fatigue and had numerous trips to the hospital with no answers. It's been almost 2 years now and it's time I got to the bottom of it! Banana, Peanut Butter, Coconut & Choc Chip
These little guys are SOO easy to make.
Crunchy on the outside and sticky in the middle πŸ™ŒπŸΌπŸ‘… Very few ingredients and so simple to throw together.
INGREDIENTS
4 Ripe Bananas (medium sized)
1 Cup Coconut Flour
1/2 Cup Peanut Butter
2 Tbsp Vanilla Extract
1 Tbsp Organic Maple Syrup
1/3 Cup Vegan Choc Chips
METHOD
Preheat oven to 180 degrees
Place baking paper on baking tray
Mash Bananas
Add remaining ingredients and mix well
It should be a thick, well formed & sticky dough consistency, add a little coconut milk if too dry or a little more coconut flour if too wet.
Break into walnut sized portions, roll into balls, place on baking tray and then flatten with a fork.
Place tray into oven for 15 mins or until slightly brown.
Remove from oven and let cool

Well my weekend consisted of lots of baking here's a new recipe I tried, I took it for a very nice Sunday lunch at the mother in laws to be. This is @madeleine_shaw_ independence day sponge cake but instead of eggs I used chia eggs and actually turned out really well and was the first time I'd used coconut sugar definitely recommend this cake! topped with coconut icing and strawberries πŸ™Œ πŸŽ‚ #intolerances #dairyfree #eggfree #yeastfree #glutenfree #refinedsugarfree #chia #buckwheatflour #coconut #strawberries #sundayroast

Found these at our local grocery store; talk about a win!!
Merlin likes them way better than the freeze-dried fruit from the baby aisle for a few reasons! 1) They're bigger. He's not against finger foods but he's at a point where he'd rather hold on to something and take bites than always eat bite-sized. 2)They're fruits that could be grown locally, save for the bananas. A lot of the baby stuff involves mangoes and pomegranates and all sorts of "exotic" fruits. Not a bad thing but sometimes it's just nice to keep it simple. Apples and bananas are what he likes. And, (possibly the most important reason πŸ˜‰)... 3) they're Mickey Mouse Clubhouse themed. That's ALWAYS a win in our house!
It's so hard to find snacks that he both likes and can actually eat so when we stumble across a find like this we all get really pumped! It's not easy having a child with food intolerances so every victory feels like a big one!
