A big part of traveling is trying different foods and cuisine. My favorite from #sydneyaustralia were the meat pies. I’m thinking this needs to go on my recipe recreation list. Is it possible to make this #insulinresistance friendly? #challengeaccepted

Ingredients
1 poblano pepper
3 tomatillos, quartered
1/2 yellow onion, diced
1 red bell pepper
1 lb ground beef
1 15oz can diced tomatoes
2 tbsp tomato paste
1/2 tsp pink Himalayan salt
1 tsp cumin
1 tsp paprika
1/2 tbsp garlic powder
2 tbsp chili powder
1.5 cup beef broth

Roast poblano and tomatillos until charred on all sides.

Add tomatillos to crockpot a roughly mash. Dice poblano and add to crockpot.

Sauté onion & bell pepper in a little olive oil. Once soft, add ground beef & brown. Add to crockpot.

Add remaining ingredients and stir to combine. Cook on low for 4-6 hours.

It’s no secret I’ve had a rough past few weeks. And I’m sure I will have rough moments in the future as well.
I indulged a bit more with some food than I should have (Diet Coke...French bread 🤤) but things happen. Ya know what it didn’t do? It didn’t send me spiraling. It didn’t make me gain any weight. Gasp! Carbs didn’t make me gain weight?! Is this real life?! Yes, honey boo bear, it is real life. I’m still most definitely sad about my paw paw but I know he wants me living my best life. I felt incredibly guilty about moving to Colorado but my mom told me how happy he was for me. My grandma told me how happy he was for me. He was always looking at the pictures I sent them. He was always asking about the mountains and calling me Ole Chap every time I called.
So you know what I’m going to do? Put on my girlboss panties and do what sets my soul on fire. What I know I’m meant to do. To follow my dreams and live a life that truly sets not only my soul but my heart and entire body on fire with passion. And that’s helping people. One thing I am is nurturing AF.
You hungry? I got you boo. I’ll come over and cook for you. You wanna work out? Let’s do this damn thing. You need a shoulder to cry on aka someone to cry with because if you cry around me you won’t cry alone? I’m there with some tissues boo.
I gotta do this. I gotta help people get healthy. And do their best to fight off the terrible diseases and cancers that we get because ya know what, it fuckin sucks when it happens. I fully intend to get not just my body but my mind and spirit to the healthiest, happiest, soul on fire place it can be. Polędwiczki wieprzowe w sosie grzybowym. Do tego ryz basmati pelnoziarnisty, ugotowany wczoraj, przez noc postal w lodowce. I fasolka szparagowa, robiona na parze.

Grzyby mam suszone wiec je gotuje w wodzie do zmiekniecia. Grzyby wyciagam, wody nie wylewam.
2 cebule pokrojone w kostke podsmazam na oliwie, pod koniec dorzucam grzyby i po kilku minutach dodaje odrobine masla. Wyciagam z patelni i wrzucam na nia poledwiczki.
Poledwiczki wczesniej kroje na 2cm paski i lekko rozbijam, posypuje pieprzem.
Smaze na patelni, niedlugo, po 2 min z kazdej strony (zalezy od ich grubosci) i potem posypuje sola.
Dorzucam grzyby z cebula.

Smietane mieszam z woda pozostala z grzybow, wlewam do patelni i podgotowuje.
Na koniec posypuje swieza pietruszka.

I made this for first time after church today and it is the BOMB! This is how I made it. Feel free to add your own twist➰

Spaghetti Squash Casserole: .

✔️Cut squash in half, scoop out the guts, bake upside down at 350 for about 45 min. .

✔️ Make ground beef mixed with Italian ground sausage. ✔️Add low carb Marinara and fresh spinach and let simmer
✔️ Scrape the spaghetti squash into a 9x11 glass dish
✔️While squash is hot mix with cream cheese until melted. ✔️Pour the meat sauce in dish and mix together.
✔️ Add Mozzarella on top, bake on 350 for about 20 min
