500g Greek Yoghurt
½ tsp Harissa
1 lemon, zest and juice.
A bunch of Parsley
1 small punnet of Pomegranate
1. Mix the yoghurt and most of the harissa (leave a pinch for garnish), along with most of the chopped parsley.
2. Add a pinch salt and pepper then a dash of lemon juice and zest, taste and add more to your liking.
3. Place in a nice serving bowl, topped with the pomegranate seeds, a drizzle of olive oil, and the remaining harissa powder and parsley.
4. Serve with cucumber batons, mixed radishes, carrots and baby gem lettuce.
