In the winter months a warm lunch is always very welcoming and in fact this is great for dinner too.
Spiced Courgette and Farro (Spelt) Fritters, they take approx. 25 mins to prepare plus 20 extra for salting the courgettes.
1kg courgettes, grated + 1 yellow courgette if possible
100g quick cook Farro (spelt)
Vegetable oil for frying
1 small onion, finely chopped
1 clove garlic, crushed
11/2 tsp turmeric
2tsp cumin seeds
4 Tbs flour
Zest of half lemon
2 Tbs chopped coriander
60g mature cheddar, grated
Salt and pepper
Put the grated courgettes in a colander and sprinkle over the salt, leave for 20 mins. Cook the spelt according to the packet instructions,drain. In a dry frying pan toast the cumin then add the onions and garlic, sauté until soft, add the turmeric and cook for another minute or so. Tip into a bowl along with the spelt. Squeeze out the excess water from the courgettes and add to the bowl. Add the lemon zest, coriander, flour, cheese seasoning and give it a good stir. Mould into approx 12 patties and sauté in a frying pan for 5 mins each side.
Finely slice the remaining yellow or green courgette and make a vinaigrette to pour over, add herbs and chopped roasted seeds and nuts. Serve with Greek yogurt.
