"What's for dinner" a vegan quinoa 🥕 burger! Indulge in this super nutritious meal.
1/2 C quinoa
6 oil packed sun-dried tomatoes 🍅
1 1/2 c black beans cooked
2 garlic cloves
1/2 c shredded carrot 🥕
Prep work: stir quinoa and 1 1/2 c water in sm pan w salt bring to boil. Cover reduce heat to low simmer until liquid is absorbed. Place onions, sun dried tomatoes, in medium skillet on medium heat. Cook 4 minutes or until softened. Stir in 3/4 C black beans, garlic, carrots and 1 1/2 C water. Simmer 9-10 minutes until liquid is evaporated.
Transfer beans onion mixture to food processor add 3/4 C cooked quinoa and process until smooth. Transfer to bowl add remaining beans and quinoa, season w salt and pepper. Set oven on 350 degrees. Cost bottom of cooking sheet and form patties into 8 patties place on sheet. Bake 20 minutes flip and bake 10 more minutes. Serve as you you desire #healthymealprep #fiber #indulgeinwellness
