That "Can't Please 'Em All" Egg Masala - Done I hard boiled eggs. I fried cashews from our farm in coconut oil along with garlic, onions & fresh coconut. I added in a flavourful spice mix meant for green chicken/mutton (Brand : Abhiruchi) that I had brought in Kolhapur. Once cool, I made a smooth paste out of this along with salt, lots of fresh coriander & tamarind pulp.
I cooked in coconut oil & tempered it with mustard seeds, curry leaves & green chillies. I added in the smooth paste as well as coconut milk & simmered till done. I switched off the gas & gently stirred in a tablespoon of raw coconut oil & then garnished with halved hard boiled eggs along with crispy curry leaves & fresh coriander. For Mangala & me, it was a nice twist to a regular egg masala & I ate it with a whole wheat paratha 😍
Mangala cheekily informed me that it tasted better with rice🙈 As expected, it was a huge flop with @beingbengt who asked coyly for a toastie instead🙈
Do I regret making this? No. It was a nice variation☺
