What a week it has been- and it isnt even over yet! I love a meal that can be easily thrown together during a crazy week such as this. Gilled steak, mixed greens, grilled red onions, tessamaes green goddess dressing (my favorite when I feel un devoted to creating make my own!), and roasted yellow and red beets. I ran out of my bulk sweet potato stash yesterday so I have had to rely on oatmeal 💁🏼 it's a weird pairing with a salad but hey- a girls gotta do what she's gotta do during a crazy week! Fun fact: beets can serve as a natural pre workout! Research has found that beetroot is a natural vasodilator due to its dietary nitrates. It has been shown to improve blood flow + oxygen delivery leading to increased exercise tolerance and decreased recovery time during endurance exercise. For those of you who find the idea of eating beets or drinking beet juice a little difficult to stomach pre workout you can always consider a powdered form of beet root! For instance one serving (2 tsp) of @beetelite mixed with water is the equivalent to 6 whole beets! Cool 😎 off to work with the @tarheelfootball boys to make sure these guys are hydrated for their big game against Duke!! LEGGO💪🏽
