Willie makes it look easy! But as soon as you have a go you realise how much skill is involved in a perfect fillet; minimal knife strokes and tight along the bones to minimise wastage.
However, you don’t need to be perfect to do it at home! For a fishmonger it’s vital to minimise waste and meet the customer’s expectations. But when you do it yourself, it doesn’t matter if you mess up—anything left on the bones can be cooked up for stock or soup!
During our fish experiences you’ll have the chance to try filleting yourself. We encourage you to buy fish whole and use everything!
