You made it to Thursday! Let this serve as inspiration to power you through the rest of the week.
Yes, these breakfast bars are wholesome goodness for when you are on the go according to @thugkitchen - but I couldn’t resist dreaming of the weekend and this being my goto on my way to yoga. Weekends can be busy too.
2 cups rolled oats
3/4 cup uncooked quinoa
1/4 uncooked millet
1 1/4 cups chopped nuts & seeds - whatever you like
1/2 cup dried cranberries or similar
1/4 tsp salt
1/2 cup maple syrup - the real stuff
1/2 cup almond butter (could also use peanut if that’s your jam)
1/4 refined coconut oil, I used refined cause that’s what I had or olive oil works here too
2 Tbs organic cane sugar
1 tsp vanilla extract
1/4 -1/2 cup coconut chips (my own addition)
Preheat your oven to 350, prep a 9x13 pan with some parchment paper leaving some hanging over the sides.
Toast your oats, millet, and quinoa til toasty.
Mix your nuts, seeds, and fruit.
When your grains are toasty, mix them w/ nuts & seeds.
Warm the maple syrup, coconut oil, but butter, vanilla, and sugar in small saucepan until nut butter melts and it’s smooth.
Mix the melted goodness with the dry goodness til it’s all together.
Pour into prepped pan, pat it down to make sure it’s all even.
Bake for 25/30mins. Til toasty golden gorgeous. Remove from oven and let cool to room temp before cutting into bars. Store in fridge.
Boom. Delicious, nutritious to-go.
