Still remember meeting @mrniland for the first time, and hearing his idea for Saint Peter, a nose to tail seafood restaurant focusing on all Aus seafood and dry aged fish. I was a little skeptical to be honest. I guess if it were such an obvious idea, then I might have done it a long time ago! A bold idea takes guts, confidence and execution. I don't know anybody who knows fish (esp. aging and offal) and seafood like these guys do, and they keep pushing the boundaries everyday. It's been pretty cool to see you and your team's success. Congrats on a well deserved award and here's to many more.
