Psyching myself up to go back to work ... and totally adulting like a pro .... A. "Bridgetown Breakfast" prepped for the week (pre-chopped bacon and mushrooms, and spinach all ready to throw in the frypan. Hard boiled egg all ready to peel and eat). B. My favourite lunch salad (fetta, beetroot, spinach, carrot - with the fetta and beetroot no dressing needed). C. Curried egg and spinach - all ready to make a sandwich tomorrow morning (for actual lunch, the salad is morning tea or first lunch whichever you prefer long days mean multiple work meals ). Note: this does not photograph well but I don't care.
D. Macaroni salad - this was dinner (corn capsicum (this is impressive), spring onion, celery, cheese. Need to play with the dressing to get it right). The big girls added tuna.
I'm so impressed with myself! Just saying. For the doubters: I did do this all myself and I didn't palm anything onto the girls except finding containers.
