Idlies were made with unpolished variety rices brown, black and black urad dal in the proportion 2:1:1 and fermented it over night. S prefers to dunk these variation of idlies in Sambar coz he's too mainstream types🙊

For lunch box a quick veg curry with par boiled veggies, sautéed onions, tomatoes in coconut oil with some spice powders was stirred together and ended up with crushed kasuri methi also was packed Phulkas and Curd Rice with Vendaya Maangai (instant mango pickle)

Sunday Dinner: Stuffed Crepes 🌯

I believe in making 1 thing and re-using it with a re-invented purpose all over again ☺️

Made dosa earlier today n used it as a crepe to combine chicken n veggies in tangy, sweet, salty and spicy flavors.. .
A sprinkle of cumin powder all over, made the dish come together 😋
.
✨Tangy:
Cooked: red onions sautéed in little grassfed butter and once done, sizzled with balsamic vinegar.
Raw: tomato slices
.
✨Sweet:
Cooked: sautéed corn in grass fed butter, then sprinkled little sea salt n cumin powder
Raw: Beetroot shavings
.
✨Spicy:
Cooked: Coated previously boiled potato slices in cayenne, turmeric, pepper, coriander powder n sea salt plus light olive oil. Then roasted on each side.
Raw: trendy bits of celery
.
✨Salty: Himalayan pink salt, celery bits

You can also see how these different textures might create a blender variety as well: soft tomatoes, crunchy cucumbers, juicy corn n chewy chicken...

The famous Kancheepuram idlis ( Steamed and seasoned rice and lentil savoury cakes) This a variation of the usual recipe where the batter is seasoned with powdered dry ginger, pepper, cumin, asafoetida, ghee(clarified butter) and fermented with yoghurt. These idlis taste exceptionally delicious when had with spicy idly gun powder. Even bettter if u eat it the way I do; gently crumbling the idlis together with the podi and some gingelly oil. But honestly what edifies the taste is a cup of strong filter coffee. What's special about these idlis are their unique cylindrical shape. Unlike the conventional ones steamed in the idli moulds, these are steam cooked in stainless steel tumblers.
