If there is one dish that’s a bit of a revolution, I would say these marinated onions are it! You never imagined that such a simple condiment could unilaterally be such a hit with onion lovers and haters alike!!
Here’s what you need to know about them - thinly sliced red onions, placed in a low bowl, and a marinade mixture of olive oil, zero carb zero sugar red wine vinegar and oregano, stirred together and poured over the onions. Rather than putting them in a refrigerator, keep them on the counter (which is how they got the name, Counter Onions), uncovered and use them every day on just about everything savory. It’s a 2-for-1 - use the marinade as a salad dressing. I make them about 2 hours before I want to use them and be sure to make enough to last for a couple of days!
•1 small red onion
•1/4 - 1/2 cup olive oil •1 Tbsp dried oregano
•1 Tbsp zero sugar zero carb red wine vinegar
1.Thinly slice the red onion and place in a low bowl.
2.In a separate bowl, stir the olive oil, red wine vinegar and dried oregano together to combine well. Pour the mixture over the onions, making sure they are submerged.
