If there is one dish that’s a bit of a revolution, I would say these marinated onions are it! You never imagined that such a simple condiment could unilaterally be such a hit with onion lovers and haters alike!!
Here’s what you need to know about them - thinly sliced red onions, placed in a low bowl, and a marinade mixture of olive oil, zero carb zero sugar red wine vinegar and oregano, stirred together and poured over the onions. Rather than putting them in a refrigerator, keep them on the counter (which is how they got the name, Counter Onions), uncovered and use them every day on just about everything savory. It’s a 2-for-1 - use the marinade as a salad dressing.  I make them about 2 hours before I want to use them and be sure to make enough to last for a couple of days!
Ingredients
•1 small red onion
•1/4 - 1/2 cup olive oil •1 Tbsp dried oregano
•1 Tbsp zero sugar zero carb red wine vinegar
.
1.Thinly slice the red onion and place in a low bowl.
2.In a separate bowl, stir the olive oil, red wine vinegar and dried oregano together to combine well. Pour the mixture over the onions, making sure they are submerged.

Wasn’t going to post but I realized I have to stay accountable. Didn’t get fully back on track this week. Getting back into full gear after not staying committed is tough. But we try again today. I’ll take the 1lb loss though. Keep on pushing, that’s the goal.💪🏻💪🏻. Week 16 here we go!!!!!!

Vulnerable post alert! Why do we not recognize how hard this is and how far we've come. Yesterday I went shopping and tried on clothes, the whole outfit on the right was a medium and actually felt really great on, then I took this picture and immediately picked it apart, 'you still aren't at your lowest weight, you probably should still get a large, you still look fat, not where I want to be etc. I didn't buy this outfit, and now looking at it this morning I wish I would have. And putting it next to where I started I actually feel proud of how far I have come.
