Incredible! Tastes like it has cheese and lasagna noodles but no. I checked the recipe 3 times to make sure this is one serving. It has a lot of “heat” to me. Next time I may adjust the hot stuff, but I still gobbled it up. Do you ever find that the simplest meals are the most satisfying and delicious? Dinner is served. I love my Indian food and here I mixed a cup of butternut squash spaghetti 🍝 with just over a cup of bhindi (okra). Just added salt and pepper. On the side of course 5.5 oz steak! 🍖 As well as my @waldenfarmsinternational ranch and hot sauce mixture.

Breaded baked eggplant, tofu ricotta. Delicious! This is 2 cups eggplant, 4 oz lean ground beef, 4 oz tofu ricotta (omg! So much like ricotta), 1 medium pulverized tomato, 1 bag crushed dorados, 1 egg. Only eating part of the plate because of the two restricted vegetables and a little extra protein with the egg coating. Seasoned with basil, garlic powder, oregano, dried parsley and pepper. The tofu ricotta recipe came from allrecipes. I cut recipe in half, divided again, and made a meal to freeze.
