The simplest version of an Indian chicken curry a person should learn to cook because there is nothing more satisfying than a meal of hot fluffy fragrant steamed basmati (or jasmine or gobindobhog or even boiled) rice eaten with steaming hot curried chicken with lots of soupy, chickeny gravy and succulent infused with gravy chicken on the bone, on a cold winter or rainy day. You can eat versions of this curry in any Dhaba (highway restaurants in India) in the eastern part of India.
The simple recipe is lightly brown ground or grated onions. Once they are light brown, add a pounded ginger-garlic paste and cook for 2-3 minutes. Add chicken and keep bhunoing (stir frying) for about 15-25 minutes until the chicken browns lightly. If the chicken starts sticking, add a splash of water. Add turmeric, coriander, Kashmiri red chilli powder, salt and half a teaspoon of garam masala. Bhuno (stir fry) for few minutes. Add some tomato paste (or beaten yoghurt) and deglaze. Then add hot water and cook on medium heat until the oil separates to the surface. Put on the pressure cooker lid and turn to low for 5 minutes after 5 whistles. Then turn off. Open once the pressure subsides. If you are not using a pressure cooker, cover and let it cook on a low heat for 45-60 minutes or until the chicken tenderises. You can choose to reduce the gravy or if you like a soupy style curry, don't bother and eat while hot. Soul satisfying and just what we needed before starting a major health drive and after a long, frustrating day. Feel free to alter quantities of all/ any ingredients to suit your taste.
Sorry about the messy bowl, we were very hungry. We rarely eat chicken, but when we do, we enjoy it immensely.

My day is crazy today. I'm a multitasking monster... Since 2000.... I ran today, worked out. Thankfully, I didn't cook breakfast, because our cooks are back 🙏🏽🙏🏽. After breakfast, I had calls with our agency, cooked lunch, fed the dogs medicine, made hotel reservations, supervised housekeeping, did vegetable shopping for next 3 days and made weekly plans for staff simultaneously.
Our lunch today is a very light Tehri (vegetable pilaf) and lauki (bottlegourd) koftas. I'm boasting a little but I think I make the tastiest Lauki koftas on earth, second to my mother. They are melt in the mouth soft and delicately flavoured. The secret is to use the least possible besan (chickpea flour) while binding the koftas. Even a little bit more and the koftas turn dense and yuck. If you make lauki koftas well, it's a great way to initiate people into eating lauki. I've made these many times, and unsuspecting people who claim not to eat lauki have eaten them happily. I'm looking forward to lunch even though I cooked it myself!

Another version of chicken curry for lunch today. I'm trying to train one of the youngest member of our staff (Ramesh nanny, who was originally hired to look after Brad and Pitt) to cook in my absence. So far, his kitchen duties were only chopping and cutting and minor washing and cleaning. I've put in good effort (2 years of nagging, instructing, explaining, teaching) and he is able to cook near perfect dals, different vegetable bhujias (stir fries), variable curries, perfect steamed rice (basmati and boiled both, one may think cooking rice is easy but most people cook rice really poorly), 4 kinds of salads, 4-5 breakfast dishes, perfect boiled eggs and his rotis (chapattis) and paranthas are getting there. There are various reasons for me keeping on training staff. We have our business located in 5 Indian cities and N travels non-stop. We have homes in 2 and sometimes when N needs to stay for a longer period of time, he grumbles about food being not cooked the way it is at home. I cook food that intentionally is light and flavoured with fresh ingredients. With 2-3 trained cooks, it will be easier to deploy someone with N when he travels.
Now, I have started training Ramesh to cook non-vegetarian food. Since, chicken and fish are easy to cook, we've started on them first. This chicken curry is a variation on the one I cooked a while ago, in that there is no ginger garlic paste, and chopped coriander is used to flavour the curry at the end. Glad that Ramesh did a decent job. I made the spice mix and supervised the bhunoing (stir frying meat and onion paste). This simple, chicken home style curry is delightfully chickeny and enormously satisfying with plain steamed rice (or plain rotis for that matter). Next week, Ramesh will cook this on his own. Keeping our fingers crossed.

Our Sunday Mother's Day Lunch cooked by the general dogsbody, Mother of dogs (N's words) yours truly is a chicken curry and rice. This was demanded by N. The recipe is a standard curry recipe: bhuno (stir fry/ sauté) grated/ ground onions until uniformly light brown, add chicken and ginger-garlic paste (I always use fresh hand pounded paste, which are incredibly satisfying to pound to paste in my late MIL's mortar and pestle). Bhuno (stir fry) some more until the chicken is browned and the ginger-garlic doesn't smell raw. Add turmeric powder, red chili powder, coriander powder, my special home-made-by-me Garam masala. Cook for two minutes. Add puréed tomatoes (or yoghurt, I used tomatoes today) and let it cook until oils are released. Add hot water to a desired consistency and salt (at this point, I added some boiled potatoes - my mother would have an apoplectic fit - because N ate both the legs of chicken while "tasting" the progress). Let it bubble away till the oil reaches the surface. Add the lid and let it cook until 3-4 whistles in a pressure cooker. If you are cooking it in a pan, cover, reduce heat and let it cook for 30-40 minutes. Done. We are eating the chicken curry with rice, but if the gravy is thicker, it goes very well with hot phulkas (chapattis), tandoori rotis or naan.
N has also polished off two bowls of curry/ gravy, on the pretext of checking the salt. 🙄🙄
At this stage, I'm praying there's enough chicken curry for everyone else.
