This might be the last of the porridge bowls for a while now that it's warming up...I've been a bit slow to let them go this year, but am looking forward to whipping up some yummy overnight oat combos in their place😍
This lot was cooked in 1/2 water, 1/2 almond milk & topped with pumpkin seeds, paw paw, crunchy peanut butter, frozen berries, sultanas, pumpkin seeds & a few cheeky dark choc chips💫
I've spoken about my love for oats here before...a great complex carb & a good source of dietary fiber including beta-glucan for digestive & cholesterol support, they are so versatile & I love how easily they can be incorporated into our days ie; porridge, overnight oats, muesli, cookies, smoothies, crumbles...👍🏻😊
Also, for fellow breastfeeding Mumma's out there, remember that we need more kilojoules, fluids & nutrients & adequate intakes of things like protein to nourish & help make that amazing milk...as a starting point, I personally look to have a glass of water each time I breastfeed & around meals & focus on nourishing snacks, macro balanced meals & eating to satiety as often as is needed💧

Nourishment means different things to different people. I fall into the comfort camp and enjoy a quiet moment with my brekky after Cora’s gone to nursery, usually topped with my fave fruit and nuts and a dollop of almond butter. If I’m feeling fancy I might throw in some dark chocolate and I’ve been known to crush and mix in a mince pie 😂 #woahthere

But as I know just a small proportion of followers see my stories, I’ve decided to do one post a week with a new recipe, or featuring one from a local purveyor of porridge (I’m looking at you @brochan.cafe 😉), so you can see what I’m tucking into and try it out for yourself.
What’s your favourite combo? I do love good old fashioned oats with water and a pinch of salt like my lovely granda used to make. Sometimes he’d put a little cold milk on top for variety. If I wanted eggs for brekky he’d make himself a bacon roll first (whether he wanted one or not) so the eggs took on the flavour of the bacon. He’d be up at 5am every day to walk to the newsagent, buy his paper, milk and morning rolls. Sometimes it’s the little things we remember most ✨
I’m not sure what he’d make of my porridge but it's a wee creative outlet for me! I like to take my time with it and enjoy it before getting down to work. Here 👆🏻 from a few days ago we have pre-cooked quinoa heated up with almond milk and blackberries, topped with sliced apple, flaked almonds and almond butter. It took a wee while for me to come around to the idea of eating quinoa or rice for brekky but it really works 👌🏻

The snow storm trapped me inside the house with random ingredients and specific cravings. After much scrambling around the kitchen, I decided to use whatever was at hand to satisfy my warm soupy, spicy craving. Hence, 3 bean chili (mung beans, chickpeas, black beans). ⁣⁣
What? ⁣⁣
Produce: ⁣⁣
* 1 cup sprouted Mung beans (sprouted isn’t necessary, just regular ones soaked for 2-3 hours will do just fine) ⁣⁣
* 1 cup cooked chickpeas.⁣⁣
* 2 cups cooked black beans. ⁣⁣
* 1 small onion ⁣⁣
* 3/4 cloves of garlic ⁣⁣
* 1 tomato (all I could find in the fridge, I’d suggest you add more) 🍅⁣⁣
* 2 tbsp tomato paste. ⁣⁣
* 1 Red bell pepper. ⁣⁣
* 2 carrots 🥕🥕⁣⁣
* 1 cup frozen corn 🌽 ⁣ ⁣⁣

Spices: ⁣⁣
* 1 tsp cumin ⁣⁣
* 1/2 tsp Cayenne pepper⁣⁣
* 1 tsp smoked paprika. ⁣⁣
* 1/2 tsp Garam masala. ⁣⁣
* a sprinkle of Nutmeg. ⁣⁣
* 1 tsp unsweetened coco powder. ⁣⁣
* 1 cube vegetable stock bullion. ⁣⁣
* 2 chipotle peppers in Adobo sauce. ⁣⁣
* salt to taste. ⁣⁣
* 3/4 tbsp oil to sauté. ⁣⁣
Garnish: ⁣⁣
* Shredded cheese 🧀 ⁣⁣
* Sour cream.⁣⁣
* chopped avocado 🥑 ⁣⁣
How? ⁣⁣
* Heat up a big soup pot/Dutch oven. Add in the oil to begin cooking. ⁣⁣
* Once the oil is warm. Add in the garlic, onion and carrots. Sautee for a few mins.⁣⁣
* Add in the tomato, bell pepper and tomato paste. Let all the vegetables cook for a couple of mins. ⁣⁣
* Add in the vegetable stock bullion and some water. ⁣⁣
* Add in all 3 beans and all of the spices. ⁣⁣
* Add water to adjust the consistency. ⁣⁣
* Simmer the chili on low heat with the lid on for upto an hour.⁣⁣
*Stir occasionally to see if more water is needed. ⁣⁣
Serve hot with a dollop of sour cream, some chopped avocado and shredded cheese. ⁣⁣

Sunshine ☀️ Porridge 🥣. I turned my Turmeric Tea from Caribbean Modern into a warming, spiced bowl of porridge this morning with extra cardamom and allspice, cooked with raisins so they plump up so juicily, and banana, blueberries and pecans stirred through. I wish it was never ending 🙌🏽.
