Just make an omelet with as many eggs you want (i used 2 whole and 2 egg whites with some grill spices from Nadalina) and cover the pan with a lid.
After a few minutes, when its all cooked, flip it over and put some cheese if you want.
Again, cover the pan with a lid so the cheese melts.
After few minutes, add the rest of the stuffing and roll it up!
I've put turkey ham and low fat cottage cheese.
