Paleo Power Balls from PaleoAngel.com! @paleo_angel I just had these protein packed Paleo balls for the first time this morning and ahhh mouthgasm! So good, vanilla is my favorite so far plus it's AIP! but I tasted chocolate (cocoa powder) and carob as well and they are incredible! Perfect go to protein snack or as grab and go part of breakfast!

Last weekend we met my parents at Fogo de Chão to celebrate my dad's birthday. For those who aren't familiar with it, it is an all you can eat Brazilian steakhouse. This was the first time taking Emily out for a meal now that she is actually eating with us (we don't go out for meals much). We brought along her smock and water cup and sat her up in the high chair with us. This little girl sat at our table and eat and watched everything going on for close to 2 hrs and was happy as a clam. No whining or crying, just munched on meat and meat and more meat and a few veggies the whole time. I am so very proud of our smart, food loving baby girl.

Emily and I have slipped into a pretty nice morning routine when it comes to breakfast. Almost every morning, she munches on a pile of blueberries and a sweet potato and plantain muffin (recipe coming soon) while I make her a two egg omelette with spinach. I try to offer her variety at lunch and dinner, but found that keeping breakfast consistent kept her consistent, if you know what I mean. 😉

Today is my anniversary. And I didn't even know! At a meeting with my rheumatologist this afternoon she told me that exactly 5 years ago today I got my Rheumatoid Arthritis diagnosis. Wow it's been a long 5 years with more steps backwards than forwards it seems. I've been that less than 5% with the severe adverse reactions to all the RA meds I've tried. But today I'm at the best I've been since that day. Granted I'm still on a couple of meds and the dreaded prednisone is still there but I'm functioning really really well on 1.5g daily - the first year I was on 25g. And yes there's still the odd twinge. But the inflammation is down, my bloods are good, so this is a happy day.
And so I'm celebrating with a good old cup of tea, ginger this arvo, with a couple of the sweet potato ginger bliss balls from @healing_family_eats #healingeatscookbook. Would have preferred a slice of her banana tea cake but #whole30 and these delicious balls are whole30 compliant. So there! I never quite got round to putting their carob coats on them 😳
Aaand I'm sitting outside listening to the wind in the bamboo and the birds having a good old chat. It's a good afternoon 😎

See, the Strawberry Balls went so fast...I mean real fast. It totally threw me off guard and I oversold them.
Now I'm Rushing Back in the kitchen to make another FRESH batch of Strawberry Power Balls just for you.
I only have the time & fresh ingredients (chunks of real organic strawberries!) to do one more small batch..... >> Grab them asap!
After that they are GONE for a while, not sure till when. Maybe next summer? Depends on how long the fresh produce is good. It's seasonal, of course.
And also because I am working on a New Product...and creating new flavors takes time to make sure I get them PERFECT for you.

So what do you do after waking from a 9 1/2hr sleep 40 minutes before you're due to meet girlfriends?! Well there's no time for food so @healinggreenbroth it is. With extra goodies of course.
The base was a good handful of mixed salad leaves, parsley, celery (only 5cm to keep it low fodmap), 1/4 avocado, radish, garlic scapes, zucchini, teaspoon of kale powder, teaspoon of turmeric powder, tablespoon collagen peptides, lemon juice, Himalayan salt and the barest amount of pepper, avocado oil and a cup of chicken broth.
Filling, nutritious and oh so tasty. Breakfast can wait!

And there is lunch. Todays version of the chicken grain salad from #nourishcookbook by @meatified. Always been a firm favourite of mine and I happened to have greens already washes and spun and chopped and a cooked chicken breast.
Started sautéing some pumpkin cubes in my cast iron pan on the hob before putting in a hot oven to roast for 15 minutes. Once caramelised and soft back onto the hob, added the sliced rainbow chard and kale with marjoram, sage, oregano and thyme. Quick stir then added the shredded chicken and left to get crispy. About 10 minutes. Served warm with a spoonful of @joannafrankham winter Kraut.
This salad is great both warm and cold and is so easy to make. Try it

Coming out the other side of a 22hr fast and used up leftovers from yesterday's BBQ.
These leftover "rolls" are @seasnax nori sheets (the ones made with evoo); steamed collards; yesterday's coleslaw of red and green cabbage, orange and purple carrots, daikon, apple and fresh dill pickled in fermented turmeric vinegar and lemon juice for about 30 minutes; Kos lettuce; sliced avocado; BBQ shrimp and a dash of @niulife naked coconut aminos.
Anyone game to roll these for me??!!

Breakfast al fresco. With temps ramping up to 30°+ all week decided to make the most of the cool morning breeze.
Last night I roasted an Hawaiian sweet potato (whiteish skin with white/purple flesh) so all I needed to do was chop it up and add to a pan of homemade coconut milk with a kaffir lime leaf to warm through. Some semi thawed frozen blueberries were added to warm too and then plated and topped with fresh pawpaw and homemade coconut chips.
Making sure I got my greens in I made a @healinggreenbroth of chicken bone broth, spinach, rocket, parsley, coriander and lemon thyme, avocado oil, lemon juice and salt

Back from Sydney with a few new ingredients means I'm now able to start in on @thecuriouscoconut's #latinamericanpaleocooking cookbook.
Dinner tonight was Cuban Vaca frita de pollo - garlic-lime fried shredded chicken with Dominican Republic mangú con cebolla - mashed green plantains with onions and sautéed chard - no collards. Three plates and 3 different versions 😳...
Bottom - mine lowfodmapped so no garlic or onions but I did use garlic scapes in the chicken
Right - mr20 his over rice and not plantains
Top - hubby as per the recipe!!
May I just say I've found my new favourite mash - those plantains are just so good

Probably one of my most favourite meals whether it be for breakfast lunch or dinner. The pièce de résistance is the dirty mussels, the only way I eat them these days - quite literally defrosted ready to eat mussels tossed in oregano, turmeric and salt. For those not following lowfodmap add onion and garlic powders but you know what I'm more than happy with this kind of dirty!
Underneath is the healing soup from #healingkitchencookbook with fresh rosemary and lemon thyme (which has gone ballistic) from my garden. Topped off with coconut cream and coriander.
Bit of a bizarre way to start our week of 30°+ but hey that's how I roll. And unfortunately I can feel the heat induced inflammation starting. I don't do well in humid heat 😣Happy Saturday for those that are Saturdaying

"I like cold salmon and I cannot lie.." 🎶😂🤷🏼‍♀️ made some oven baked salmon the other day and the fam tore it up (my husband HATES seafood 😢 and anything that tastes "fishy") I marinated the wild caught salmon fillets in organic lemon juice, @bigtreefarmsbali coco aminos, a lil bit of organic coconut sugar, pink salt and parsley. Oven preheated to 400, put some parchment paper on my sheet pan, laid out all the filets on the tray. Added a little more pink salt, garlic powder and parsley. On the guys salmon I put a small pat of @tinstarfoods brown butter ghee and a 1/4 tsp of manuka honey on all them bad boys. Roast for 20 mins and dive into perfection! Hubs said it was the best salmon he's ever had! Marinating and having good wild caught fish I think made the difference 🙌🏻 #nailedit .

Yummy and simple Asian inspired lunch. A stir fry mix of spinach, spaghetti squash, and salmon with a splash of coconut aminos and fish sauce.

Smoothie bowl. Can't remember the last time I made one of these but I did not forgo the healing green broth when I made this...
I'm not a big fruit water but the last couple of days I've been almost craving it so I listen to my body and give it what it tells me it needs. The base of the bowl was açai pure from @amazonia_qld blended with a banana, avocado, spinach, kale, kafir lime leaf, a glug of blueberry and ginger #kombucha and some chicken bone broth! And that is why my broths are very neutral in flavour. And despite the purple of the açai the bowl is pretty green!!
Topped with kiwi, always skin on if it's organic, the most beautiful pawpaw and fresh blueberries, a few coconut shreds and a big ol' dollop of @coyo_is_coconuts natural coconut yogurt
