After a lovely evening with @christine.chitnis and her family, the girls were very inspired to try a recipe from Christine's cookbook "Icy, Creamy, Healthy, Sweet." We made the Mexican Chocolate Fudge Pops — and oh my, they are delicious (following Christine's suggestions we made them without cayenne pepper and added fresh raspberries). When the girls asked if they could eat popsicles for breakfast the next morning, I couldn't say no because avocado, coconut milk, honey, and cocoa powder?! Genau richtig für einen Sommertag wie heute:
Für 8 #popsicles 👉🏼 1 Dose Kokosmilch (180ml), Rohrzucker (Menge je nach Geschmack), 1/2 Limette, 1 Mango, Ananassaft (Menge je nach Geschmack)

Kokosmilch mit Zucker und Limettensaft verrühren. Mango schälen, in Stücke schneiden und im Mixer mit Ananassaft zu einer homogenen Masse mixen. Kokosmilch in eine Glaceform geben, 1 Stunde einfrieren, eine Schicht Mangopüree dazugeben und wieder einfrieren. So weiterfahren bis die Glaceform voll ist. Nach etwa 3 bis 4 Stunden im Gefrierfach (ab der letzten Schicht) kann die Glace gegessen werden.

Carrot protein pops because it's still 80 degrees in #oklahoma, haha. My kids seriously go bananas for these. They would eat them all in one sitting if I let them. I kinda just winged it and threw some stuff together. I used 1 scoop of vegan vanilla protein powder, hemp milk, 2 peeled carrots, 1/4 cup maple syrup, and vanilla bean powder. It's love. 🥕

Healthy mango popsicle (each popsicle has at least 5 grams of protein.) 1 jumbo mango or 5-7 regular mango
About 11 oz vanilla yogurt I used oikos triple zero
Limes
Chamoy low sodium
Chile powder low sodium
Freeze the mango 1-3 hours. Blend mango and yogurt. Add to mold (can use cupcake molds or cups). Wait until solid. If it's stuck in the cup. Add hot water to the outside of the mold.

Add a little bit of chamoy in the mold or you can add it after the popsicle are frozen.
Add water or lime juice to the frozen popsicles then add the powder
