For todays dining enjoyment I give you (or in my case, family)
Lemongrass Cilantro Chicken.
4 Chicken breasts (boneless; you’re choice to leave skin on or not)
1c. Lemongrass (remove outer layer and chop fairly fine
1c. Cilantro - roughly chopped
1/2 medium sized yellow onion -rough chopped.
1tsp. Minced garlic
1/4c. White wine vinegar
1/2tbl. Fish sauce (a good brand, please)
2 “3 Finger pinches” of kosher salt
1 “3 Finger pinch” of ground black pepper
Combine all ingredients except chicken in a food processor and process until you have a nice, uniform shape.
Pour mixture in with chicken and make sure it all gets evenly coated. Let marinade for 4-8 hours. When it comes time to fire up the grill, remove chicken from refrigerator rto take the chill off. Get your grill up to around 375 and cook chicken 4-5 minutes per side or until internal temp ias at least 165. Reserve lemongrass mixture and place about a tablespoon on each breast for about 2-3 minutes before you pull chicken off.
I decided to grill some acorn squash as a nice healthy side.
