Gotta to clear out the leftover tomato salsa & 2 frozen Japanese chicken thighs today.

2 chicken thigh (skin intact), 1/2 cup tomato salsa, 1/2 cup fresh sweet corn, 1/4 cup diced tomatoes, juice of 1/2 lemon, 2 tbsp chopped fresh italian parsley, 1/2 tsp italian seasoning, salt, pepper & sugar to taste, sesame (optional).

Place thawed chicken thighs in a large ziplock bag & dump tomato salsa in the bag. Make sure the chicken are covered in salsa & leave it in the fridge overnight or an hour.

Preheat oven at 200C.

Heat frying pan with some oil. Carefully remove all marinate from the chicken thigh (keep the marinate), pan fry skin side down. Sprinkle salt & pepper. When the skin is golden brown, flip over & cook for 1 more minute.

Place chicken on baking tray & bake for 10-15 min till the internal temperature reads 74C. Side aside to rest the chicken for 10min after it’s cooked.

In the same frying pan, pour the salsa used to marinate the chicken, add juice of 1/2 a lemon & pan juice from the chicken.

Add italian seasoning, salt, pepper, sugar & sweet corn. Cook till the sauce reduced & thicken. Add diced tomatoes, stir & off the fire. Add chopped italian parsley. Stir well.

Sliced cooked chicken. Spread salsa sauce over steamed rice, place chicken over the sauce, sprinkle with sesame & chopped italian parsley.

We shared one chicken thigh, so I saved the other one for another day. That’s one less meal to cook!!

Cook once, eat twice with shish kebabs!

Double salsa double the deliciousness 😁

Salmon patties are made using fresh salmon fillet (250-300g remove skin & diced) with 1/2 cup panko (or any dry breadcrumbs), 1 egg, zest of 1 lemon, 1 tbsp lemon juice, 1 tsp italian seasoning (or herbs de provence), 1 tbsp julienned fresh mint, 1/2 tsp sweet paprika, 1/2 tsp salt & 1/4 tsp pepper.

I don’t actually measure out the ingredients. If the salmon mixture is too wet, add more panko till u can make patties out of the salmon mixture easily. Make 2 big patties or 4 small patties, depending on the size of buns u bought.

U can cook a small teaspoon of the salmon mixture to taste if it is well seasoned but I didn’t bother with that.

Grill the patties over hot griddle pan or pan fry them in hot frying pan. Cooking time depends on the thickness of each patty about 5-7min per side. They are done when the internal temperature is above 60C.

I don’t measure the ingredients but I measure the temperature of the cooked patties. Hahahaha.

Be adventurous with the seasonings, try different dried herbs, fresh herbs & spices. I kinda follow the big picture of a recipe and make it my own.

As for the salsa, all u need is lime or lemon juice, garlic, onions, cilantro, hot sauce, salt & pepper... mix & taste if u like the taste, it’s good enough. You can use ready-made ones too.

Cooking is a time to relax & have fun in the kitchen. It’s totally fine to cheat a little here & there. There is really no point slaving & killing yourself in the kitchen. Life is hard enough.

Ohhh and toast the buns before assembling your burgers.

1.5 inch TENDERloin, mid-rare. I used a sous vide for 45min at around 130F after seasoning generously with fresh rosemary, salt, pepper, garlic. Usually tenderloin doesn’t have little veins of fat streaking through, but I’m certainly not complaining — juiciness level was unctuous.
