Thanks to the Gaspe fishermen commitment to sustainable fishing practice their lobster stocks are healthy. They were often putting back pregnant female in the water. Minimal commercial fishing size was increased from 67 to 82.5 mm in the last decades, doubling the eggs production, thus resulting in an increase in weight and reproduction rate. Unfortunately other regions are not so stringent in their practice. Yet it is a very complex resource to manage. Warming up of the ocean waters🌡, changes in the currents patterns and tide, it's all very challenging for the lobster to adapt to quick changes. So we must appreciate every bite of this delicacy😋. We used to eat more often in season, but in recent years we have considerably reduced our consumption, we need a very special occasion. 🤔Call of the environmental spirit.
