We had a craving for the kids menu. So we made it.👧🏻🧒🏼. The chicken tenders are coated in crushed up @epicbar baked pork grinds. They came out so great - crispy and tasty 🍗. Sweet Potato Fries 🍠. House Salad 🥗. Oh and that sauce - it’s a copycat Ken’s Honey Mustard, made with all natural whole ingredients. I love Ken’s honey mustard and this did not disappoint. Here’s the recipe I used:
1/2 cup mayo - I used homemade.
1/4 cup Dijon mustard- I used one with no sugar and simple ingredients.
1/4 cup raw honey.
1 T apple cider vinegar.
Pinch of salt.

A heaping salad is your best lunch option. Lunch should be a lighter meal, to keep you fueled up and not slow you down. Dinners should be heaviest and last portioned meal of the day. To ensure you are getting the healthiest meal, a full spectrum of colors is essential. Getting a wide variety of colors ensures you get the most vitamins and minerals in your meals. Supplementing with vitamins is good but it’s best to have whole nutrition meals for your body. Food is medicine if we treat it that way, by elimating unhealthy meals which lack life giving properties we work to restore our health and balance ourselves. This said is one of my favorite go-tos for lunch. A bed of baby spinach and spring mix mixed with chopped red and green cabbage, red onion, carrots, celery, cucumbers and red pepper ensure a vitamin and mineral packed meal. I topped the salad with one of my local favorites from New Jersey! Dr Pragers veggie burger (@drpraegers) made locally in Elmwood Park! I love this company every one of their ingredients are whole foods. I would drive past their factory every day on my way to work at my Garfield Santoni’s restaurant. You can see it from The Garden State Parkway. A quick & easy pasta dinner 🤗
- Cook up your fave noodles
- Mix together avocado, olive oil & some Fauxmagerie Zengarry cashew vegan cheese
- Heat the cheese mixture in a nonstick pan over medium heat for only a couple of minutes

Yes, “nuts” are full of fat, but not all fats are your enemy. Nuts are among the foods on a long list of healthy fats. Among those on the long list of beneficial nuts are Almonds, Walnuts, Pistachios, Pecans, Macadamias, Cashews, Hickory, Soy nuts, Brazil nuts, Hazelnuts, and Chestnuts.
While nuts in general are a beneficial part of a healthy diet, Walnuts contain almost twice the healthy antioxidants as other nuts. Also, the results from a recent study indicate that Almonds consumption may reduce colon cancer risk via at least one Almond lipid-associated component.
Nuts are full of fiber too, which is one key for the millions of Americans who are battling various forms of diabetes or have pre-diabetes.

Vegan chicken Parm! The best selling item on my menu at Santoni’s Restaurant for over twenty years was our chicken parm. Rainbow chard is such a colorful and vibrant vegetable and is a nutritional powerhouse. Paired with pine nuts, garlic and some of Blue Heron’s (@blueheroncheese) colorful Sea Butter put together these veggies and nuts were a dynamic and bold flavor. It looks like a lot of food, but it’s not. The #rawspinach really helps create volume on the plate. The couscous is about 2/3 cup, 12 medium size shrimp 🦐 with veggies, and 2 scrambled eggs. This is my #firstmealoftheday out of 3. As my day goes I eat lighter and lighter. I am back on my #intermittentfasting (12 hour window, but more like 9-10). I stopped drinking both alcohol 🍷 and coffee ☕️ (for diet but mostly as a dedication to God like #fasting; it’s a personal thing but you can have wine and coffee on I.F.).

Most likely my next meal will be a smoothie of some sort which will have the most amount of carbs out of all my meals (I like that in the middle of my day) and last meal will have 10-25 grams of carbs, primarily a protein (meat or seafood and a low #starchy veggie(s).
