We cooked a Sunday brunch at @thelooneyloverandpoet based on our spring travels in Uttarakhand hills. The menu showcased the preserved, fresh and wild ingredients from Kumaon hills. We presented some of our own 'Muse' recipes created using the ingredients sourced from the region and many traditional and seasonal recipes we learnt this time around. We also brewed some Jun Tea kombucha with honey and green tea from Uttarakhand. 🏞️

. We plan to travel to more hill regions this year, and take you on journeys into these places through the food we cook inspired and learnt from the land. .

We recently completed our Spring trip in the Kumaon hills of Uttarakhand and have brought back the memories and learnings with us - along with some beautiful spring season recipes and ingredients. 🥀

🏔️ Come eat your way through the northern country with us over brunch this Sunday at @thelooneyloverandpoet. Since we brought back fresh produce, there's only a limited number of guests we can cook for. The eight course menu is mostly vegetarian, with two non vegetarian courses (veg substitutions available on prior intimation). Spots will be confirmed on prepayment. 🏔️

We're back in Bombay after a Spring trip in the hills. This time, we travelled our way across the Kumaon hills of Uttarakhand and brought back some fresh produce, new recipes & ingredients with us.

. 'The North Country Feast' is a celebration of the land, cuisine and ingredients of Uttarakhand.
We've designed an 8 course sit down Brunch menu with 3 courses of 'Muse' recipes - our experimental recipes using the native ingredients brought back from the hills. And the rest 5 courses are composed of traditional recipes from Uttarakhand. For the two non vegetarian courses, veg substitutions can be made on prior intimation.

Word of caution: If you're a herbivore or don't like the sight of raw and offal meat, please don't swipe right. But, if you're an adventurous meat eater, believer in nose to tail cooking and eating or just curious about how different cuts of meat are used in recipes swipe away! 😊

In the book The Whole Beast: Nose to tail eating, Fergus Henderson writes “It would seem disingenuous to the animal not to make the most of the whole beast: there is a set of delights, textural and flavorsome, which lie beyond the filet.” In fact, organ meats, offals and variety meats are very nutritious, sometimes even more than their muscle counterparts. Apart from health, there's such varied range of taste and textures that lay in these meats that they can taste exquisite and give the cooks a wider canvas to play with creatively. Almost like extra colours for that perfect painting you've been working on. Last but not the least, if you butcher a beast, it's only respectful to not discard the part of it that YOU think are gross. Honour the animal by savouring all it had to offer and feed you 🐏

So, we started our day with a visit to the village butcher, Ahmed Ali, who hails from Bareilly but has lived in the hills since he was born & runs this family butcher shop. We went to his shop at 6:30 in the morning, when he brings the meat in and learnt about different cuts & organs including the types of tripe, one of which is called 'Satpuria' locally as it has seven layers and soaks more of the sauces & spices because of that during the cooking 🐑🐐
.
We then went to Inder Da's to learn how to make goat sausages from scratch. The main dishes made from offals and organ meats in Uttarakhand are: Bhutwa (stir fried tripe and other offals), Arji (Sausages stuffed with meat, offals and blood), Gyuma (Sausages stuffed with mandua/Finger millet) and Ganwa (A recipe made with Goat or Sheep's legs). We made Arji with him, learnt how to clean the intestine casings, which organs to use, how to chop & mix the meats for stuffing & how to cook them. Also chatted about the best season for goat meat in the region (when they come all fattened up on Alpine grass). Got some Arji back! Feed you soon 🤗

It's been almost two years since we hosted our first pop up meal in Bombay. A lot happened post that, both of us quit our day time jobs eventually, travelled to numerous hills, cooked way more, are so proud of the knowledge we've gained about the produce and culinary traditions in our home regions and other hills, met so many lovely people, hustled like crazy from cooking on a make shift rooftop kitchen for 50 people till midnight to carrying chairs and tables and stoves and pots and pans and running and becoming ops bosses in the process. What we didn't expect though, was to be nominated for an award! .

. Mid-day has launched the first edition of The Guide Restaurant Awards, 2018 where a hundred and one finalists vie for 35 top honours. We've been nominated for the best pop kitchen award. Although, industry recognition was something we didn't even dream of when we started two years back in our house in Bandra - it did bring a smile upon our pahadi faces. Us hill girls don't know how to handle a compliment well except turning our faces red! :D Thank you @middayindia! .
