A couple days ago, I woke up in the middle of the night with the weird idea of fruit and eggs and kale all together 🤔 I was half asleep, but I think my subconscious was on to something 🤤 this is a sweet potato + kale + apple breakfast hash with some scrambled eggs and I honestly think it's one of my favorite breakfasts yet. It's gluten + dairy free (obviously), paleo, annnnd #boyfriendapproved 😂It's pretty easy to make, too. Here's what you need to do:
-1 apple, chopped
-1 cup of sweet potato, shredded (I used a cheese grater)
-2 cups of kale, torn into tiny pieces
Annnnnd all you need to do is dump it all into a large frying pan with 1-2 tbsp of olive oil! I added thyme, salt, + pepper. Great with eggs (plot twist: yes, I did eat the yolks) 🍳 serves two!
