Vegan chickpea curry by @elavegan ๐Ÿ’›

Recipe
Servings: 2
Ingredients:

1 (15-ounce can) chickpeas, drained and rinsed
2-3 small eggplant or 1 big one
1/2 big onion, diced
2-3 cloves garlic, minced
1 cup coconut milk, canned
1-2 tbsp curry powder (you can use curry paste instead)
1-2 tsp onion powder
1/2 tsp ground cumin (or more to taste)
1/4 tsp turmeric (optional)
1/4 tsp smoked paprika (optional)
1/4 tsp cayenne pepper (optional)
Salt and pepper to taste
Cooked rice of choice (I use Yasmin rice)
Spinach or fresh coriander for serving

Instructions:

1) Chop the eggplant and onion into small pieces and put them in a large
pan (I use a ceramic pan and no oil) and cook on medium heat for at
least 5 minutes. Add the garlic
2) Drain and rinse chickpeas and add them to the pan
3) Add coconut milk, spices + salt and pepper to taste. Simmer for about
5 minutes
4) Serve your curry with cooked rice of choice. My favorite is Yasmin
rice. Decorate with either spinach or fresh coriander. Enjoy! #letscookvegan

Recipe: 6-8 fresh figs (depending on the size). 1 lime. 70 gr walnuts. 150 gr raw cane or coconut blossom sugar. 100 ml sparkling water. 100 ml plant based milk. 100 gr vegan butter. 300 gr flour. 2 tsp baking soda. 1 tsp baking powder. pinch of salt.

This innocent baby boar was found scared and alone after hunters killed her mother leaving her orphaned.

She has had her entire world fall apart and her mother stolen from her ๐Ÿ’” and she now needs a safe place where she can live out the rest of her life free from fear and suffering.

She was found by a couple who had no choice but to try and help her but it's dangerous and illegal for them to keep her with them and if she is found she will be taken and killed.

That's why we need to bring her here. Where we can keep her safe.

She has been turned away by every other sanctuary and we are her last chance.

But to do that we desperately need your help.

We need to raise money urgently ๐Ÿ™ to expand our current pig enclosure so we have the space to take her, and to purchase a sanctuary van so we can carry out rescues like this and safely transport the animals to the hospital when they need treatment and medical care.

We already have over 40 pigs at the sanctuary and despite getting asked weekly to take more we have always said no as we haven't had the resources or space.

But these animals need us and they have nowhere else to go. This baby needs us and we don't want to say no again.

PSA: I am a genius in the kitchen! I've just eaten one of the most satisfying meals I've ever hadโค๏ธ teamed up with the little brother to make this insanely good Spaghetti with "meatballs". I used @eatbanza gluten free chickpea spaghetti noodles, Sean whipped up a classic Italian marinara sauce with sautรฉed mushrooms and I created the star of this meal...the lentil meatballs! I'm in awe of these bad boys, they were so sooo good๐Ÿคค This meal is crazy full of protein, 1 serving of the chickpea noodles alone is 25 grams of protein and then when you add the lentil meatballs; lentils have about 9 grams of protein per half cup๐Ÿ˜ฑ so much protein! And as always, this whole dish is vegan and gluten free๐Ÿ˜‹โค๏ธ .

The milk myth has spread around the world based on the flawed belief that this protein and calcium-rich drink is essential to support good overall health and bone health in particular at any age. It is easy to understand that the confusion about milkโ€™s imaginary benefits stems from the fact that it contains calcium โ€“ around 300 mg per cup.

But many scientific studies have shown an assortment of detrimental health effects directly linked to milk consumption. And the most surprising link is that not only do we barely absorb the calcium in cowโ€™s milk (especially if pasteurized), but to make matters worse, it actually increases calcium loss from the bones. What an irony this is!

Hereโ€™s how it happens. Like all animal protein, milk acidifies the body pH which in turn triggers a biological correction. You see, calcium is an excellent acid neutralizer and the biggest storage of calcium in the body is โ€“ you guessed itโ€ฆ in the bones. So the very same calcium that our bones need to stay strong is utilized to neutralize the acidifying effect of milk. Once calcium is pulled out of the bones, it leaves the body via the urine, so that the surprising net result after this is an actual calcium deficit.

And the 12 year long Harvard Nursesโ€™ Health Study found that those who consumed the most calcium from dairy foods broke more bones than those who rarely drank milk. This is a broad study based on 77,761 women aged 34 through 59 years of age.The countries with the highest rates of osteoporosis are the ones where people drink the most milk and have the most calcium in their diets. The connection between calcium consumption and bone health is actually very weak, and the connection between dairy consumption and bone health is almost nonexistent.โ€
