After eating a meal, the nutrients and other substances absorbed from our GI tract make an extra stop before entering our systemic circulation. Everything we consume must first be detoxified and filtered by our LIVER. When we eat a diet high in saturated fat, trans fat, sugar, and cholesterol, our livers are overwhelmed by toxins and they slowly leak enzymes into our bloodstream, a sign of liver injury. The medical term for this is "transaminitis." While we may also see this after binge drinking or in response to certain medications like statins, by and large the leading cause of transaminitis is the STANDARD WESTERN DIET. Eventually our liver turns into fois gras (aka FATTY LIVER or hepatic steatosis). I see this ALL DAY LONG as a radiologist, often in people as young as 22 and it's not only in people who are overweight. Chronically people with fatty liver are at a much higher risk of liver scarring or cirrhosis, the leading cause of liver failure worldwide.
Non-alcoholic fatty liver disease has now surpassed alcoholic fatty liver disease as a precursor of cirrhosis. Hepatitis B and C are still other major causes but I'm convinced that if people universally ate a whole food plantbased diet, even in the setting of having chronic viral hepatitis, the rates of cirrhosis worldwide would be MUCH, much lower. Almost every MRI and CT scan that I read for cirrhosis also has evidence of a high fat low fiber diet (atherosclerosis, gallstones, kidney stones, diverticulosis, etc.). What's the only truly effective treatment for cirrhosis? A liver transplant.
Take care of your livers friends. You only have one. Eat low fat, whole PLANTBASED foods. Ditch the toxic meat and dairy products.
