La comida basura o comida chatarra​ (esta última denominación, empleada en Panamá, Ecuador, Chile, Costa Rica, Colombia, México, Paraguay, Perú, Argentina, Bolivia, Venezuela y Uruguay, es una traducción literal del término en inglés junk food) contiene, por lo general, altos niveles de grasas, sal, condimentos o azúcares (que estimulan el apetito y la sed, lo que tiene un gran interés comercial para los establecimientos que proporcionan ese tipo de comida) y numerosos aditivos alimentarios, como el glutamato monosódico potenciador del sabor o la tartrazina (colorante alimentario). Potencialmente, todos los alimentos son perjudiciales para la salud si se abusa de su consumo, pero los que se consideran comida basura lo hacen en mayor medida por necesitarse menores cantidades para producir efectos adversos o por consumirse en mayores cantidades, dada su facilidad de consumo (comida rápida) o el uso social de su consumo (ligado a formas de ocio juvenil). También puede ocurrir que determinados grupos de población, o los que padecen determinadas enfermedades previas, sean más sensibles a sus efectos. Suele relacionarse el consumo de comida basura con la obesidad, las enfermedades del corazón, la diabetes del tipo II, las caries y la celulitis.
La comida basura brinda al consumidor grasas, colesterol, azúcares y sal, mientras que una comida saludable debe proveer fibras, proteínas, carbohidratos, vitaminas y minerales necesarios para el rendimiento del cuerpo.

RISOTTO DE REMOLACHA CON SALMON

Raciones 2 | preparación 10 minutos | cocción 1h y 20 minutos

Ingredientes 2 remolachas y media pequeñas, 3 tazas de caldo de verduras bajo en sal, aceite, ½ cebolla pequeña picada, 1 diente de ajo, 120gr de arroz arborio, 2 cucharaditas de tomillo fresco, 170gr de salmón sin piel ni espinas, 1 puñado grande de rúcula, 60gr de queso feta bajo en grasa y 2 cucharadas de perejil fresco machacado.

Envolver las remolachas y 1 cucharada de agua en papel de aluminio y colocarlas en el horno durante 30-40 minutos. Si son fáciles de pinchar con un tenedor significa que están hechas. Cuando estén frías deben ser peladas y trocearlas a dados.

Calentar caldo en otra cacerola a fuego medio y rociar con una fina capa de aceite. Añadir la cebolla y ajo y pochar 5 minutos o hasta que estén ligeramente tostados y fragantes sin parar de remover, verte un cuarto de caldo caliente en el cazo de arroz y cocer hasta que la mayor parte del caldo se haya absorbido.

Mientras, calentar una sartén antiadherente a fuego medio y rociarla con una fina capa de aceite. Añadir el salmón y saltear durante 5-6 minutos o hasta que esté cocido al gusto dándole vueltas de vez en cuando. Coloca en un plato y dejar reposar 2 minutos. Cortar en tiras gruesas.

Añadir la remolacha y la rúcula al risotto y remover. Mantener al fuego, sin prar de remover, hasta que la remolacha se caliente y la rúcula se ponga tierna.

Para servir, dividir el risotto en dos cuencos y colocar el salmón encima. Espolvorear por encima el queso feta y el perejil.

HOMEMADE NUTELLA

Prep time: 5 mins
Total time: 5 mins
Serves: 10
Ingredients:

6 ounces Toasted Hazelnuts
½ cup Water
¼ cup Cocoa Powder
¼ cup Maple Syrup (I have used as little as 1-2 tablespoons, so you can adjust up or down to taste)
Apple Slices or other fruit (to serve)
Instructions
Add the hazelnuts, cocoa powder and maple syrup to the food processor
Run until the hazelnuts are very finely chopped, and everything forms a paste
With the food processor running, add the water in a slow and steady stream
Run until thick, and smooth
Enjoy!!!!
Store leftovers in the refrigerator

Poor sleep never give the immune system a chance to recover.
And now you are opened up to sickness and disease taking a foot hold in your body.
