My favorite comfort food has got to be a hearty warm lasagna! This one is a quinoa zucchini version, with a creamy rich ricotta based sauce instead of you usual béchamel - loving this sauce in a lot of bakes! It's simple layers of:
1. Red sauce, taken up a notch by simply adding quinoa. It gives it not only a nutritional boost but also a nice 'meaty' texture.. almost feels like bolognese.
2. Spinach lasagna sheets
3. Thinly sliced zucchini
4. White sauce: ricotta, parmesan, 1 egg, fresh basil, salt & black pepper ... and repeat! Top it all off with some mozzarella & some shredded basil leaves, and let it bubble away. It's one of these dishes that hugs your tummy on the inside ;)
