🌮Taco Night 🌮 Let’s face it, it doesn’t have to be Tuesday to enjoy tacos. Every night could be taco night in our house! 🙌🏻

Mini 🌮 made with organic @goldminenaturalfoodco blue masa from @feeeeonah. 🌮 Start with a 1:1 ratio of masa and filtered water, mix well and let it sit for ten minutes under a damp towel. Check and make sure it is wet but also fluffy! Roll dough into balls and press using a tortilla press or even your hands. Cook on a hot cast iron skillet without oil, 1-2 minutes per side. Chickpeas, fresh corn 🌽 and summer squash cooked in water with garlic and cumin plus cabbage, scallions and avocado 🥑 on the inside, plus refried black beans with @violife_foods cheese 🧀 on top!

Busy morning for us today. I had a dentist appointment so I made some Overnight Oats last night to help my morning be less hectic. Got home and had to put a quick lunch together for Emma. Served her a hard boiled egg (I keep a few of these in my fridge pre-cooked), roasted chickpeas, my Garlic Parmesan Parsnip Fries, a fruit salad in fun shapes and some milk. I usually give her water with her meals but she kept asking for milk so I decided it would be alright if I gave her some with her lunch. Pretty quick, easy, healthy and nutritious! •

First time in a supermarket trolley! I don't usually shop with Lake if I have a lot to put into my basket (she's not super into being in the pram much, so I end up carrying her and the groceries home for 20 mins) but today I decided to try it out! She loved it for an entire 2 minutes and then wanted to get out. Doesn't like swings much either. Is that odd? ASIAN FUSION - I made lemongrass and ginger rice with crispy 5 spice chicken and edamame beans today! The twins loved the strong flavours :)

RICE
Peel and grate/blend 1.5cm of ginger and 1 stick of lemon grass. Add it to your rice with 1 teaspoon of sesame oil and cook as usual. You will get a lovely fragrant rice!

CRISPY 5 SPICE CHICKEN
Put 2 heaped dessertspoonfuls of cornflour in a bowl with 1 heaped teaspoon of 5 spice powder. Add a pinch of black pepper (or cayenne pepper, if you prefer!).
Take 250g of diced chicken breast and coat it thoroughly in the flour mixture.
Shallow fry on all sides (about 10 mins) until crispy and golden :)

For EXTRA CRUNCHY CHICKEN
After you have covered the chicken in the flour mixture dip it in some beaten egg and then into fresh breadcrumbs/panko breadcrumbs/rice crispies or crumbled cornflakes and fry until golden and extra crunchy!

My favorite comfort food has got to be a hearty warm lasagna! This one is a quinoa zucchini version, with a creamy rich ricotta based sauce instead of you usual béchamel - loving this sauce in a lot of bakes! It's simple layers of:

1. Red sauce, taken up a notch by simply adding quinoa. It gives it not only a nutritional boost but also a nice 'meaty' texture.. almost feels like bolognese.
2. Spinach lasagna sheets
3. Thinly sliced zucchini
4. White sauce: ricotta, parmesan, 1 egg, fresh basil, salt & black pepper ... and repeat! Top it all off with some mozzarella & some shredded basil leaves, and let it bubble away. It's one of these dishes that hugs your tummy on the inside ;)

Lunch: Brown rice with steamed vegetables (cauliflower, broccoli, colorful carrots & kale) topped with yogurt dressing.

Brown Rice
🔺Add 1 tablespoon of oil (used avocado oil) to a hot pan.
🔺Add 1 small onion, diced. Sauté for 3 minutes or until translucent.
🔺Grate 1 garlic clove and a very small amount of ginger. Add to the onions cook for 30 seconds.
🔺Add 1 1/2 cups of rinsed brown rice to the pan. Stir and toast for a minute or so
🔺Add 3 cups of filtered water or broth
🔺Bring to a boil, lower the heat to low and allow it to simmer until all the liquid has been absorbed, can take about 20 minutes.
🔺I spooned some into a separate glass food storage container for my little one that doesn't contain salt
🔺Added some salt, to taste, to the original rice for me and my husband.

Yogurt Dressing:
🔺1 cup yogurt
🔺3/4 cup shredded cucumber (washed)
🔺1 garlic clove, grated (optional)
🔺some cilantro finely minced (optional)
Add all the ingredients to a bowl and mix. Spoon some of the dressing into a separate glass food storage container so won't contain any added salt. I then added some salt, to taste, to the original mixture for me and my husband.

Pureed Baby Food: for babies not new to solids, may combine these meals into a blender and blend until it's at a purée like consistency. Might have to add some liquid if it doesn't fully blend.

Breakfast this morning is peaches, grapes and blackberries (chopped into halves) and two mini crumpets with butter. And a cup of apple juice 😋

More mini muffins for my munchkins.... Apple, sultana, cinnamon yoghurt muffins! They gobbled up the last batch in 3 days so made sure to make a few extra this time! 😊
