As I celebrated my 52nd birthday over these past few days, I was looking back on previous bdays. I came across this picture from my bday in 2011. It made me realize a few things.
First, I can clearly see how unhealthy I was and to think I allowed that to be my norm for so long.🤭
It also made me realize just how uninformed and uneducated I was on the subject of health and all that it involved. Wow, was I in for a shocker!!😲 After taking a chance on a Pink Drink in Nov. 2014, It all started to turn around for me! I really had no idea what to truly expect, but I figured I had nothing to loose.
So by early 2015 I was off to a good start and I was starting to learn about GUT HEALTH and ALL it involves regarding SO MANY facets to our health and immune system. I soon realized that overall, these all natural supplements are making a difference in how I felt, which was AMAZING!😉 Is it always easy? No!
Do I slip and have my days or moments? YES!
We all do at some point, but it’s about getting back on track, not letting it control you, having the right tools in your tool belt and NEVER giving up!! Although I’m not where I want to be, I am definitely happy with where I am at 52!
And that is something I couldn’t say back in
Nov. 2011 at 46.

Alright people! Fully raw Friday! 😂 this is it, no makeup, sweaty, red faced and ready to share my journey with y'all! Before Plexus it didn't matter how well I ate or how often I worked out I would still have that bloat or water weight on my stomach! Pomegranate & sesame chicken with coconut ginger brown rice🍛

Ingredients
2 chicken breasts, cubed
3 TB flour
2 cups broccoli florets
1 medium onion, small diced
1 inch ginger, grated
3 cups cooked brown rice
1 garlic clove, finely chopped
1/4 cup unsweetened coconut, toasted
1/2 cup pomegranate juice
1/4 cup soy sauce
2 TB sambal chili paste
1 TB sesame oil
1 tsp hot sesame oil
2 TB brown sugar
1 TB rice vinegar .
Procedure
Coat chicken pieces with flour
In a large skillet heat canola oil over medium high heat and brown the chicken in batches, being careful not to over crowd the pan. Place cooked chicken on a paper towel lined plate to absorb any extra grease.
While your chicken is cooking saute your onions in a separate pan with a little EVOO, ginger, and garlic. Cook until soft, add the rice and stir until incorporated. Set aside.
Once the chicken is done drain the pan of excess oil and sear the broccoli florets.
Combine last 7 ingredients.
Add the chicken to the broccoli and pour sauce over everything. Continue cooking on high until the sauce reduces slightly, about 5 minutes. Season with salt and pepper, serve with rice and enjoy!

Harvest Apple & Chicken Sausage Stuffed Acorn Squash🍎🍊🐔

Ingredients
1 acorn squash
4 oz spinach
1 medium yellow onion, julienned
1 medium Fuji apple, medium dice
7 oz chicken sausage, small dice*
1/4 cup golden raisins
1/4 cup pecan pieces** *Grocery stores carry some great options, I used a breakfast sausage, but feel free to experiment, something spicy would be a great substitute. Or use a veggie sausage if you're trying to make it vegan.
**Totally not necessary, but it adds a nice crunch factor to the dish as well as some extra protein and fiber

Procedure
Cut your squash in half, scoop out the guts and rub with a little EVOO salt and pepper. Place on a baking sheet cut side down and roast at a 450 degree oven for about 30 minutes.
While the squash is baking start caramelzing your onion, low and slow is your friend when caramelizing, so take your time. Once the onions are almost caramelized add your diced apples. Cook cook till slightly softened, not mushy. Add the training ingredients and cook till the greens have wilted slightly.
Disperse filling into squash halves and you've got yourself a delicious, hearty, and healthy meal. Leftovers heat up like a dream, making this an ideal meal prep item too!

Life has been hitting hard, outside forces causing so much stress sleep is becoming non-existent as you can see from the bags under the eye’s not even concealer can cover...and WTH...is that wrinkles on my forehead already at 33?! 🙄
Few nights of 3 am bedtimes, more tears than humanly possible, pregnancy anxiety running high, SUPER emotional to the point YOU are annoyed with yourself, tired...mom guilt...seriously feeling it ALL.
When it hits and lasts, I feel like I’m letting those I love down, which feed’s that mood more.
Staying focused on the little things…. -Thankful that though I can’t handle eating in the mornings the last couple months, I can have superfoods and knock out that prenatal that puts all others to shame early in its place. - Thankful for wonderful girls, and the extra hugs they give when they see me struggling - Thankful for an awesome hubby that encourages me to do what I need to do to feel better😍 - Thankful I’m still able to push play on a workout daily to keep growing the body #babystrong while working to get my mind strong at the same time.

Pan seared crispy chicken leg with kimchi fried rice😋🍗🍜

Ingredients
For the chicken:
2 skin on chicken legs*
EVOO
Chopped herbs
Salt and pepper
Garlic powder

Kimchi fried rice
3 cups precooked brown rice
1 cup kimchi, roughly chopped with juice
1 small onion, small dice
1/2 cup frozen peas and bell pepper**
2 eggs, lightly beaten .
*In the interest of saving money I bought a whole chicken and butchered the legs for this dish and the breasts for another meal. Its much more cost effective to butcher the chicken yourself, plus you can make stock with the remaining carcass and whatever scrap vegetables you have on hand from meal prep! **These are what I had lying around, feel free to substitute any combination of vegetables
Procedure
Preheat the oven to 500 degrees. Coat the legs with oil, herbs, garlic powder salt and pepper and place the chicken, skin side down, on a preheated cast iron pan under medium heat and place a weight on top. The weight can be anything such as another cast iron pan or even just a brick wrapped in foil. Let sit until the skin get nice and golden brown. Turn the legs over and transfer into the oven to finish. When the thermometer reads 165 you're ready to eat!
While the chicken is in the oven start you fried rice. Saute the onions and veggies in a large saute pan. Once cooked through you'll move the veggies off to the perimeter of the pan, add your eggs to the middle and scramble. Stir the egg and veggie mixture together with the rice and add more of the kimchi juice to taste.
