Everyone could use a little Summer right now. You can always use frozen corn 🌽 if fresh is not available.
Summer Corn Chowder
Yield: 6 servings

Ingredients

8 ears fresh sweet yellow corn , husked and silks removed and kernels cut from cob
3 Tbsp butter
5 slices bacon , cut into 1/4 to 1/2-inch pieces
1 medium yellow onion chopped (1 1/2 cups)
1/4 cup all-purpose flour
1 clove garlic , minced
5 cups water
1 lb Yukon Gold potatoes , cut into 1/2-inch pieces
1/2 tsp dried thyme
1 bay leaf
Salt and freshly ground black pepper
1 cup half and half
1 Tbsp honey
2 - 3 Tbsp chopped fresh chives
Shredded cheddar cheese , for serving (optional)

Instructions

Melt butter in a large pot over medium heat. Add the onion and bacon and cook, stirring frequently, until onion has softened and just starting to brown around edges, about 8 - 10 minutes. Add in the flour and garlic and cook 1 1/2 minutes. While whisking, slowly pour in 5 cups water. Bring mixture to a boil, stirring constantly, then stir in corn kernels and potatoes. Add in thyme and bay leaf and season with salt and pepper to taste. Bring to a light boil, then reduce heat to medium-low and allow to simmer, stirring occasionally, until potatoes are tender, about 20 minutes.
Remove bay leave then transfer 2 1/2 cups of the chowder to a blender and blend until smooth. Stir the mixture back into the pot then stir in half and half and honey. Sprinkle each serving with chives and optional cheddar.

I made this low sodium Chicken Noodle Soup yesterday and it tastes as good as it looks! So perfect for cold nights! 🐓🍵 2T olive oil
2 garlic cloves
½ onion - chopped
2 carrots - chopped
2 celery stalks - chopped
14.5 oz can unsalted diced tomatoes – with juice
32 oz container unsalted chicken broth/stock
2 chicken breasts (1 breast is 4 oz)
2 lasagna noodles
1 cup fresh spinach leaves
Mince garlic. Heat oil in a large pot over medium heat and add minced garlic cloves. Stir for 1 minute. Add onion and cook for 5 minutes or until golden. Stir in carrots and celery, stirring occasionally for 3 minutes. Add tomatoes, broth, and chicken and simmer for 25-30 minutes (or until chicken is cooked through). If whole chicken breast was used, shred chicken breast once it is cooked through. Break pasta into small pieces and add to the soup. Simmer until pasta is cooked. Add spinach and stir until wilted. Enjoy!

A very healthy vegetable soup. I was amazed by the colour from adding in beetroot and spinach to my normal recipe. Ingredients: Onions, garlic, Sweet potato, potato, carrots, pumpkin, beetroot, fresh rosemary, spinach, fresh basil, mint, coriander and coconut milk. Seasoned with cumin, oregano, stick cube, salt and pepper.
Fry the onion and garlic using virgin olive oil or coconut oil and then once they have caramelised add the veggies, rosemary (2x sprigs without the stalk) and seasonings, stir for 10mins on a medium heat, then add water and stock cubes so all the veggies are covered and leave to simmer until all veggies are cooked (For a richer taste, roast all the veggies in the oven, instead of boiling them).
