Hot off the press, starting my first post-digital detox recipe w/ a bang 👏🏽 Perfect for a filling on-the-go snack to satisfy your sweet tooth are these matcha “cheesecake” protein bars!! My entire family, including my grandparents loved them and let’s just say the entire pan was gone in a few hours 😂 The sweetness level is perfect and easily adjustable to your liking 👌🏽
Mess-proof Crust dEATz:
- Melt 3 @squareorganics protein bars (use code macros_with_mon @ checkout for 20% off your online purchase!) in the microwave for approx 10 secs each - Spread the melted bars evenly onto a loaf pan lined w/ parchment paper
“Cheesecake” Layer dEATz:
- Blend 2 cups soaked cashews in food processor (Soak overnight or 30 mins in advance in very hot water) along w/ 1/2 cup coconut flakes, 1/2 cup coconut oil, 2 tbsp agave (can use any sweetener)
- Evenly spread 2/3 of this blend onto the chocolate crust
Matcha Layer dEATz:
- Blend up 2 cups of any nuts of your choice in food processor first (I used a cup of pistachios and a cup of walnuts)
- Add 1 tbsp @greenboxedco matcha powder (use code MONICA10 @ checkout for 10% off your online purchase 🙌🏼), the rest of the “cheesecake” layer blend, 1/4 cup any nut milk (I used almond), and some cacao nibs (optional) into the food processor and mix in with the nuts - Spread this layer evenly on top
I drizzled some @soomfoods chocolate tahini on top for that extra goodness 😉
Freeze for 30-40 mins and then cut into bars! I cut them into approx 9 bars. Freeze the rest (last longer) or refrigerate 👍🏽 Teaser in Final Cut 🎬 highlight!

Raspberry chia jam dEATz:
Mix the following together in a stovetop pot over medium/high heat for 3-5 mins until the consistency is to your liking.
1/2 cup raspberries (frozen or fresh), 2 tbsp milk or water (any milk works), 2 tsp agave (or any sweetener), and 1 tbsp chia seeds. Spread onto two @traderjoes Ezekiel bread slices. Drizzle w/ @eatnuttzo almond butter & sprinkle @beekeepers_naturals bee pollen👌🏽

-1/4 coconut oil
-3 tbsp honey
-shredded unsweetened coconut
•mix the cacao powder, coconut oil and honey together. Pour into muffin cups, then sprinkle on shredded coconut
•freeze for about 5 mins, then add second layer of cacao mixture. Freeze until solid and enjoy directly out of the freezer!

👩🏻‍🍳¿Qué ingredientes use?.
➕1/2 taza dátiles. ➕1/4 Harina de coco. ➕1/2 Harina de hojuelas de avena. ➕1 cda chia activada (Remojo). ➕1 cda de tahini. ➕ 1 cda de semillas de girasol. ➕ 1 cda de nueces. ➕ 1 cda de semillas de linaza. ➕ 1 cda de Almendras. ➕ 1 cdita de Canela. ➕ 1 cdita de extracto de vainilla sin alcohol. ➕ 1 cdita aceite de coco. ➕ 1 cdita semillas de hemp. ➕ 1 cdita semillas de sésamo. ➕Un poquito de agua. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
👩🏻‍🍳¿Cómo los hice?.
1️⃣Solo agregas todos los ingredientes al procesador por unos minutos y vas agregando el agua poquito a poquito hasta que se la consistencia quede como una masita pastosa/pegajosa.
2️⃣Haces las bolitas de tamaño mediano y le puedes poner coco rallado de topping.
3️⃣Las llevas al co celador por unas 2 horas y ¡listo! ✅.
