We are coming up on memorial day weekend and all I can say is FOCUS is the word! Ups and downs aside I feel like I have succeeded! I have finally gotten to the place where I’m worried less about what I can’t have and see my results as more important than any temporary satisfaction I would get from a few extra macros every night! QUICK & EASY SHRIMP AVOCADO SALAD
Ingredients:
1 tsp olive oil
1 clove of garlic, minced or pressed
1lb peeled & deveined cooked shrimp. Be sure to defrost beforehand.
2 medium Roma tomatoes, diced
1/4 cup red onion, diced
1 medium avocado
1 tbs cilantro, chopped
Dressing:
1 1/2 limes, juiced
1/2 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper 1. To prepare dressing: Squeeze limes in a container or jar, add 1/2 tsp olive oil, salt, black pepper. Seal container & shake to combine ingredients. 2. In a pan, add 1 tsp olive oil, garlic, & shrimp. Heat on medium for 1-2 min. 3. In a large bowl, mix tomatoes, onion & shrimp. 4. Add avocado to bowl. 5. Pour dressing over Shrimp Salad Bowl & gently toss. Add cilantro & serve!
