Are you going to a party or get together this Memorial Day Weekend? If you are looking for a dish to bring, give my Mediterranean Quinoa Salad a try!
It is super simple to make, and it is always a big hit!
Plus you can make it ahead of time and keep it in the fridge. The flavor just gets better and better!
Mediterranean Quinoa Salad:
-3 cups cooked Quinoa
-2 chopped cucumbers
-3 chopped tomatoes
-1cup chopped spinach
-1 bunch green onions, chopped
-1 can garbanzo beans, drained and rinsed
-1 container feta cheese crumbles (4-5 oz)
-1/4 cup Greek olives
-3 Tbsp fresh lemon juice
-3 Tbsp olive oil
-1.5 tsp Dijon or spicy mustard
-1 tsp Greek seasoning blend
. -In a small bowl whisk together the lemon juice, olive oil, mustard and green seasoning. Set aside.
-In a large bowl mix together all other ingredients.
-Add dressing to the large bowl and carefully mix.
-Enjoy right away or store in a covered container in fridge. Salad is best if it sits for a bit first.
