Finger Millet pancakes
Ingredients
1/2 cup Finger Millet
1/2 cup Whole Wheat Flour
1 Ripe Bananas , mashed
1 teaspoon Baking powder
1 pinch Salt
Cooking coconut oil, to smear

Directions
To begin making the Ragi Pancake Recipe, in a large mixing bowl, combine all the ingredients. The batter should be of pouring consistency but should not be watery or even too thick.
Heat a skillet greased with a little oil on medium heat. Once heated, pour a ladle or 1/4 cup of pancake batter on to the skillet.
Allow the pancake to cook on medium heat. You will notice the top side begins to get bubbles and air pockets and will slowly get steamed and cooked. At this point flip to the other side and allow it to cook for about 30 seconds.

Flip again and serve hot with butter and maple syrup. Continue with the remaining batter and grease the skillet with oil after each batch if using a cast iron skillet.

Serve Finger Millet Pancake Bananas along with some chopped nuts and maple syrup or honey for breakfast.

Mexican veggie frittata 🌶
Frittata’s are so easy to make and the best part is not even that you get to use whatever veggies you have in the fridge, it’s that it only takes about 15 mins to cook!👌 Last night we threw in some capsicum, mushroom, kale, spinach and feta seasoned with cumin, nutmeg, chilli, garlic, pepper and oregano 🌿 I am always horrible at flipping frittatas or Omlettes and it’s safe to say it didn’t look pretty once I plated it 🤣💕 xx

Sweaty run + lift today. I’m slowly increasing my speed of my 2 miles, I’m noticing that the more I try to push the distance, the worse my knee + ankle feels, so for now I’m stuck with increasing my speed progressively until I can handle more volume. — Lemon & Blueberry mini muffins —

If life gives you Lemons.............. make muffins 🍋😁 - 1 1/2 cups wholemeal spelt flour
- 1/2 teaspoon baking powder
- 1/3 cup pure maple syrup (or honey)
- 1/2 lemon, zest only
- 1 egg
- 1/3 cup almond milk .
- 1/3 cup coconut oil, melted + a little more for greasing muffin tray.
- 3/4 cup frozen blueberries .
***Recipe
Preheat oven to 180c. Use a piece of paper towel dipped into a small amount of melted coconut oil to grease a mini muffin tin. Set aside.
Mix dry ingredients with a wooden spoon in a large bowl. Melt coconut oil, add to almond milk, lemon zest, maple syrup and egg in a medium size jug- mix well. Pour wet ingredients into dry ingredients and mix well. Lastly add the frozen blueberries and mix until just combined. You should notice the mixture will harden when the frozen blueberries solidify the coconut oil, so work fast to get heaped teaspoons of mixture into the pan! Cook in the oven for around 10minutes, or until slightly brown & cooked through.

These freeze well so are a good addition to school lunch boxes (just pop them in frozen and they will thaw out during the day) 💛

Meal Makeover Monday!
Are you going to a party or get together this Memorial Day Weekend? If you are looking for a dish to bring, give my Mediterranean Quinoa Salad a try!

It is super simple to make, and it is always a big hit!
Plus you can make it ahead of time and keep it in the fridge. The flavor just gets better and better!

Mediterranean Quinoa Salad:
-3 cups cooked Quinoa
-2 chopped cucumbers
-3 chopped tomatoes
-1cup chopped spinach
-1 bunch green onions, chopped
-1 can garbanzo beans, drained and rinsed
-1 container feta cheese crumbles (4-5 oz)
-1/4 cup Greek olives
-3 Tbsp fresh lemon juice
-3 Tbsp olive oil
-1.5 tsp Dijon or spicy mustard
-1 tsp Greek seasoning blend
. -In a small bowl whisk together the lemon juice, olive oil, mustard and green seasoning. Set aside.
-In a large bowl mix together all other ingredients.
-Add dressing to the large bowl and carefully mix.
-Enjoy right away or store in a covered container in fridge. Salad is best if it sits for a bit first.

My new favorite snack...homemade roasted chickpeas! 😋

So easy to make! Heat oven to 450°. In a bowl mix chickpeas with 1 or 2 tbsp evoo and (any spices you like) & bake for 25 mins. Then turn off oven and leave pan in for additional 20 mins. Comes out crunchy-goodness, perfect for defeating chip cravings.. just sayin'. 😉
