This is the one food that i’m sure i make better than anything 😍 Mloukheye for Sundays!
Mloukheye (jew's mallow stew): Ingredients:
200 grams dried jew's mallow leaves
3 big onions, 1 finely chopped, 2 roughly chopped
2 1/2 garlic bulbs, 1 bulb crushed , the other 1 1/2 left as whole cloves
1 1/2 cups corriandere, finely chopped
1/2 cup lemon juice
1-2 hot peppers (optional), finely chopped
500 grams chicken breasts, boiled, broth saved, shredded
A sprinkle of dried coriander
Salt to taste
Preparation:
Boil the leaves until half tender for around 20 minutes, drain, wash well and squeeze (repeat washing and squeezing for 3-4 times until the juice that comes out of the leaves is white) - this step needs some patience 😂
Preheat oven to the maximum (from top and bottom)
Put the 2 roughly chopped onions and 1 1/2 garlic bulb (whole garlics) in an oven pan, drizzle some olive oil and a sprinkle of salt and grill in the oven until golden brown
Bringing it all together:
Heat a pot, add 2 TBS olive or veg oil, add the finely chopped onions and sauté until golden yellow, add the coriander (leave a bit of fresh coriander to add at the end) and the minced garlics (also leave some to add at the end)
Add the hot peppers and stir all together
Add the squeezed jew's mallows, and stir, add 2 TBS lemon juice and a sprinkle of dried coriander
Leave for 10-15 mn stirring occasionally on low heat
Add chicken broth and stir, leave to simmer until the leaves are tender enough (around 50 minutes
15 minutes before u turn the heat off add the remaining fresh coriander, fresh minced garlic, grilled garlic and onions, shredded chicken and lemon juice)
Turn off the heat serve with vermicelli rice and diced onions soaked in apple cider vinegar 😍

Mom barely asks me to cook her anything, but today she asked me for her favorite salad. Here’s my Panache Salad ,served next to mustard dressing!
Mustard dressing: Combine together 2 TBS mustard, 4 TBS lemon juice, 1 garlic clove, some salt, pepper and dried basil using a mixer. While mixing add 1/4 cup of olive oil gradually in a thin steady thread until u get a thick mixture! .

Simply crab 👌🏽 made of lettuce, grated carrot, grated cucumbers, crab and mustard avocado dressing
Avocado-Mustard dressing: Combine together 2 TBS mustard, 6 TBS lemon juice, 1 garlic clove, some salt, black pepper, 2 TBS olive oil, 1/4 an avocado, and dried basil or mint mix all using a mixer and you’re done! (Note that i don’t use the whole dressing for my plate) .

Salade de Chèvre Chaud aka warm goat cheese salad, made of mixed greens, beet, oranges and grilled goat cheese over mini toasts 😍 drizzled with some honey balsamic vinegar..PEGHFECTION 🤣
Used @lexquis_leb goat cheese that i got from @ufood.sal ❤️
Warm goat cheese salad:
Ingredients:
2 cups baby mixed greens
100 grams goat cheese
3 small soft toasts
1 beet, boiled and cut into half discs
A few slices if orange
2 TBS sesame seeds to coat the cheese
Balsamic glaze: mix together in a pan 1 cup balsamic vinegar and 1/4 cup honey
Keep stirring on medium/high heat until the sauce boils
Reduce heat and simmer for around 10-12 mn until it reduces by 1/3
For the cheese, coat cheese with sesame, place on top of toast and brown the top in the oven 😍 .

Lentil salad, tried to make it as organized as possible but this is the only way to get all the tastes in one spoon 😬 loaded with vitamins, fibers, protein, good fat and antioxidants, this salad is an excellent post workout meal!
Ingredients:
1 cup cooked lentils
1/2 cup halved cherry tomato
1/2 cup diced cucumbers
1/4 cup finely chopped onions
A handful of chopped parsley
2 TBS crumbled feta cheese (I used @dodoni.eu organic feta cheese that i got from @ufood.sal )
1/4 cup pomegranate seeds
1/4 an avocado, diced
Combine everything in a bowl
Dress with 2 tsp Olive oil, salt, lemon juice and pepper

I cooked fasoulya yesterday and i had some left for today, didn’t have time to take a decent picture so here’s a throwback to my favorite one 😍
Lima beans stew
1 kilogram fresh lima beans (if you don't have fresh frozen ones use the dried but use 1/2 a kilogram, soaked overnight then boiled), boiled, water discarded
500 grams boiled beef cubes (preferably a tender cut) - broth reserved
A pinch of cinnamon, all spice, black pepper and salt
3 whole tomatoes
2 TBS tomato paste
A cinnamon stick and 2 bay leaves
7 garlic cloves, minced
A handful of coriander, finely chopped

Preparation:
Wash the beans well, boil until soft (not thoroughly cooked)
Drain and discard the water
Aside, blend tomatoes with tomato paste and a little water until hey liquify
Heat a pot
Add a little oil, add the coriander garlic and boiled meat cubes and stir for 30 seconds
Add the boiled beans And the tomato puree and leave until they're hot
Cover the contents of the pot with beef and simmer on low heat until the sauce thickens around 20-30 mn
Serve with vermicelli rice .

It's going to be a busy a day... here's a throwback to my basil/red sauce ravioli topped with parmesan cheese and cooked using @adonandmyrrh flavoursome olive oil!
Red sauce and pesto ravioli
Heat a pan
Add 1 tsp olive oil and, 1 TBS pesto sauce, and 1 crushed garlic clove
Cook for a minute
Add 1 cup fresh pureed tomatoes, 1/2 cup water and 1 tsp tomato paste (u can also add some fresh diced basil leaves if you’re a basil lover)
Mix all together and let simmer for 10 mn
Add 250 grams cheese stuffed ravioli (boiled to al dente)
Transfer all to a baking pan
Top with grated parmesan cheese
Bake at 200 dedrees for around 15 mn until the top browns well! .

Kebbet batata, when you’re bored of all the meats on this planet 🤓 made of mashed boiled potatoes, mixed with a special bulgur mix that we call ‘Kammoune’ at Jnoub, and some olive oil (u can also add walnuts) ** Kamoune - a special bulgur with some herbs, vegetables and spice mix - specialty of south lebanon** 1 kg fine wheat bulgur
A handful of parsely
One medium onion
Some basil leaves
A few marjoram leaves (مردكوش)
A handful of mint leaves
Hot pepper (optional)
Dried edible roses
1/2 a green/red pepper- or both ( فليفلة خضراء او حمراء)
2 tsp Kibbe spices
1 tsp Black pepper, a pinch of cumin and salt
Process all the above in the food processor (without bulgur) then add the bulgur pulse a few times until well incorporated
Use immediately or allow to dry on a wide plate for a few hours and freeze! .
