🐟Salmon cous cous salad🐟
Couscous is a nice change to brown rice, and quinoa. Did you know that it is actually made from wheat and contains gluten? Lots of people don’t. Thankfully there’s a #glutenfree version available. 👍
While normal #couscous is just made of durum wheat semolina, gluten free couscous is made from 100% maize (corn). What’s interesting is that the carbohydrate content of the gluten free version is almost four times higher and nearly double the amount of protein – purely down to nutritional differences between wheat and corn grains.
This is my sisters delicious recipe for salmon cous cous which I have when I’m at her place on the weekends, usually in the summer when we’re chilling in her garden with my gorgeous niece. In 5 weeks we’ll be doing that again 🌞🙏🏽
Give it a try, it’s so good 👌🏾
Serves 2 | easy peasy | 25 mins | 250 calories per person
1 tsp olive oil
2 cloves of garlic
5 asparagus stems, chopped
1 courgette (zucchini), chopped
Handful of French beans, chopped
2 tomatoes, chopped
3 spring onion, sliced
1 green chilli, chopped
Handful of coriander
Juice of 1 lemon
2 fillets of Salmon - grilled in salt, pepper, chilli flakes and then flaked
60g cous cous
1/2 stock cube -
✔️Cook the cous cous in double the amount of water with the stock cube.
✔️When it’s cooked and the water has dried up, fluff it up and separate it with a fork.
✔️In the olive oil, cook the asparagus and courgette and French beans with the garlic and green chilli till the veggies slightly soften.
✔️ Combine the cous cous with the cooked veggies plus the tomato and spring onion in a bowl. ✔️Add the flaked salmon and top with freshly squeezed lemon juice, salt, pepper and coriander.
✔️Serve and enjoy 👌🏾
