You don’t realize how crappy you feel, ’til you realize what it’s like to feel good. I’ve had people ask if I “did this to [myself].” There are certain foods I just know don’t agree with me…like gluten, dairy, and a ton of fat or processed food. “Don’t you think if you ate those foods more often, you wouldn’t get so sick when you did eat them?” .

Nope. I spent way too many years of my life (pretty much from high school on) sick and feeling terrible - skin issues, constant stomach aches and bloating, gallbladder attacks, daily headaches, allergies, stuffiness, asthma and constant post-nasal drip. .
.
I didn’t realize feeling crappy was my normal until so many of these issues cleared up, and I realized what it felt like NOT to deal with these things. I do not want to go back. I’d much rather deal with the consequences when I occasionally choose to treat myself versus feel shitty on a daily basis.

This weekend, we ate out a few times. While I still ate vegan, it was more oil, soy and processed food than I’m used to. But I made the decision to treat myself knowing I’d probably feel some temporary joint inflammation and digestive discomfort.

.
But I’m already back to eating normal again. And tomorrow, I’ll feel better. It’s kinda crazy how aware you become of the way food affects your body when the haze is lifted. Regardless, my meals out this weekend were soooo good.

I'm so glad I tried this recipe out tonight.
It was quick, easy & delicious.
I'm adding it to my holiday menu for the dinner I'm hosting, but I'll be adding onion & apples.
I'll definitely make this dish over & over again!
Cook bacon, set aside. Use some of the bacon grease to cook the cabbage, then splash with apple cider vinegar, turn off heat when liquid is absorbed, sprinkle with salt & pepper. 😋
