Been keeping things very simple (as always) by roasting random handfuls of veggies and drizzling avocado oil & sea salt on them 💪 I pre-cut and wash my veggies before storing them in the fridge so I can easily just throw them on the baking sheet and forget it! I'm finding it's less maintenance and clean up than even steaming them. You've probably seen a lot of these grassfed sausages in my posts lately, they're super simple to just throw on the baking sheet with the veggies. Saving as much time as possible has been on my mind lately ⌛️ Btw this really hit the spot post-workout! Eating 4 cups of veggies per plate makes me feel...dare I say...bulletproof 😝

How cute is this!!!💕Would you share, or eat them ALL? 4 little birdies 🐦- because birdies are my fav thing to wake up to. Making these was such a HOOT 🤗 I was weirded out by sweet goats, until I tried it.

GF Toasts (I like Strada bakery bread) with
1. Homemade peanut butter and banana
2. Coconut yoghurt, Chlorella and a tiny squeeze of lime + kiwi fruit
3. Coconut yoghurt, blue Spirulina and vanilla with coconut and banana

Here's the easy recipe:
INGREDIENTS:
1 cup Apple sauce 🍎
1/2 cup @allwhites_eggwhites
3 Tbsp Natural peanut butter, melted + more for drizzling
2 tsp Vanilla extract
1 cup Quick oats
1/2 Cup Monkfruit sweetener
6 Tbsp Powdered peanut butter
2 Tbsp Cinnamon
1/2 Cup Dried apple, diced
Pinch of sea salt
1/3 Cup Roasted, salted peanuts, roughly chopped .
DIRECTIONS:
1️⃣ Preheat your oven to 350 and line an 8x8 inch pan with parchment paper
2️⃣ Whisk together the apple sauce, egg whites, peanut butter and vanilla in a large bowl.
3️⃣In a medium bowl, stir together all remaining ingredients.
4️⃣ Pour the dry ingredients into the wet and still until well mixed.
5️⃣ Pour into the prepared pan, spreading out evenly. Sprinkle with the peanuts.
6️⃣ Bake until golden brown, and the sides begin to pull away from the edges, and a toothpick inserted in the center comes out clean, about 35 minutes. Let cool completely in the pan.
7️⃣ Slice into 12 bars, drizzle with peanut butter and DEVOUR! 😋

Today's breakfast and lunch .
Started off with some protein, fruit, and a dash of calories (Aka the bread) . But way more filling than I expected. Getting into the habit of eating breakfast when your not use to it can be hard. So when you do, it's best to start it off right.
For lunch I had a salad 🥗 which contained leafy greens, tomatoes 🍅, onions and chicken 🍗 w/ my favorite French dressing on the side. Also another filling meal 🥘. If you struggle to take in smaller portions according to YOUR body type (everyone is different) a good trick is to drink lots of water . Even before eating your meal. It'll help you feel full and eat the appropriate amounts of food that YOUR body needs. Este martes se disfruta con una #RecetaMasseube súper rica y fácil de preparar: Cookies crocantes de manteca y Arándanos. ¿Qué te parece?

INGREDIENTES:
Para la cobertura crocante
• 1 taza de harina
• ¼ taza de azúcar
• 2 cucharadas de azúcar negra
• ¼ cucharadita de sal
• ¼ cucharadita de canela
• ¾ cucharadita de extracto de vainilla
Para la maza
• 1 taza manteca en cubos a temperatura ambiente
• ½ taza de azúcar
• ¼ taza de azúcar en polvo
• ½ cucharadita de sal
• 2 yemas de huevo
• 2 cucharaditas de extracto de vainilla
• 2 tazas de harina
• ¼ taza de Dulce Masseube de Arándano

PREPARACIÓN:
• Para la cobertura crocante, combinar en un bowl la harina, el azúcar, la sal y la canela. Luego agregar vainilla y la manteca. Mezclar hasta conseguir una textura con migas. Llevar a heladera por al menos una hora.
• Para la maza, batir la manteca, azúcar, la azúcar en polvo y la sal hasta obtener una consistencia cremosa. Luego agregar las yemas de huevo de a una y seguir mezclando.
• Rociar con spray antiadherente dos moldes de 12 muffins. Poner la mezcla con una cuchara y presionar contra el fondo hasta achatar. Llevar a heladera por 30 minutos.
• Precalentar el horno a 180°C.
• En el centro de cada cookie, poner una cucharadita de Dulce Masseube de Arándanos. Desparramar la cobertura crocante alrededor de los bordes, sin tapar el dulce.
• Llevar a horno por 20/25 minutos o hasta lograr un color dorado.
• Dejar enfriar durante 15 minutos en un rack antes de servir.
• ¡A comer!

Roasted Butternut Squash seasoned with Clove & Ginger, topped with Lemon Zest, Mint Cream, & Pepitas

I love Squash, especially Butternut Squash, so I'll probably be making tons of recipes with it this fall. I'm sure to some of you this dish sounds complicated, but it's super easy to make.

Cut your squash in half lengthwise, and then cut each half in half again lengthwise so you have 4 pieces.

Cut each piece into 1/2 inch slices widthwise (is that a word?! 🤷🏽‍♀️). Season with a little ground clove, ground ginger, cinnamon, ground cardamom, salt, & a little olive oil.

Bake at 350F until tender. Meanwhile blend about a cup of cashews with the juice of 2 lemons, a handful of fresh mint, garlic, a tsp of fresh ginger, salt, and a little water until it becomes a smooth creamy sauce.

Put some of the roasted squash on your plate and top with lemon zest, mint cream, pepitas, & fresh mint!

You can eat this as is, or toss it with pasta and have a salad on the side for a heartier dinner! •

Pastel pink and green smoothie jars, with plant protein and greens by @natureswayoz . These are flavoured with raspberries and lime, and were the perfect lunch after my kayla workout- trying to get fit post baby is seriously hard work, and i feel like i need extra protein. .

I used the Instant natural protein with super greens by @natureswayoz - their proteins are vegan, gluten free and sans additives (and are available at major supermarkets). Once the container is empty, i'll be converting it into a paint brush pot for my daughters art play :) #add #socialhashtags .

RECIPE.
.

Firstly, make vanilla chia pudding by adding 1/4 cup white chia seeds, 1 tsp vanilla extract, 1 Tbsp lime juice, 1/4 cup coconut cream and 3/4 cup almond milk to a bowl. Whisk, then allow to set for 10 min.

Next, make the green layer. To a blender, add the the above chia mix, 1/4 zucchini, 3 heaped tsp @natureswayoz Instant natural protein with greens and 10 mint leaves. Blend until smooth, then pour between two jars. .

Next, add a layer of vanilla chia pudding to each jar, and set aside while you make the pink layer.

To make the pink layer. To a blender, add 1.5 frozen bananas (chopped), 8 raspberries, 1 Tbsp coconut cream and a dash of nut milk. Blend until smooth, then spilt between your two jars. Finish with kiwi, or whatever you like!

Smoked paprika & garlic prawn salad 🍤
(Not as fancy as it sounds, just throw some oil, smoked paprika & garlic granules in a pan & sauté). 🥗 Dinner was a rush tonight as I got back late & was hangry 😂 🍅 Im not ashamed to admit I grabbed a few of the pre-packed med veggie packs from the super market, threw in a few types of leaves 🍃 and perfecto a simple, delicious dinner made in 20 mins packed with micro nutrients & fibre 👌🏻 I even had time to prep tomorrow's breakfast & lunch 😃 Here's to being organised 😘_____________________________________________
