Locked and loaded open faced tuna toast. Say that five times fast 😉 One of my golden rules for health is adding a veggie to every meal. Im fresh out of lettuce or spinach, so I added some blanched and chopped green beans to my tuna salad. The perfect addition. Here’s how you can DO IT 👉🏼 1 can @wildplanetfoods tuna + 1 big scoop @redwoodhillfarm goat milk yogurt + 2 tsp. @jeffsnaturals capers + 4 cooked and chopped green beans + 1 @vitalfarms hard boiled pasture raised egg + salt n’ pepper. If I had parsley, I would this for sheez. Pile it high on a toasted slice of @alvaradostreetbakery sprouted wheat bread and dive in! 🙌🏼

An intention of mine is work on my cooking skills. I love to cook but I want to get to the point where it's instinctual and I can be all Emeril BAM'ing it in the kitchen. So Charlee woke up at 8am and was super cranky. She sat down ate breakfast and watched alittle tv but she was more grumpy than she has ever been so I asked her if she wanted me to turn the lights off and lay back down. She said “ya mama binky” and a few minutes later she was sleeping. Slept from 11:30-1:20!! WOW! Which was great for me cause it gave me time to make my Brown Sugar Cinnamon Butternut Squash!! How I made my Squash.... ✏️I preheated my oven to 475✏️ I bought precut Butternut Squash from @wholefoods ✏️ I put my squash in a large bowl✏️ I did not measure my ingredients, put what you think is tasty to you✏️ I added @pompeian Organic Olive Oil to my bowl along woth @wholesomesweet Dark Brown Sugar, @simplyorganicfoods Ground Cinnamon and Sea Salt✏️ Mix it all up in your bowl then pour onto a greased baking sheet✏️ Pour the extra Sugar mixture on top✏️ Bake for 45min..... I added @stevespaleogoods Cinnamon Granola and @tedpeanutbutter Creamy PB to my bowl. LUNCH WAS FRIGGIN DELICIOUS!!! I also finally got to try @healthade Holiday Cheers which was AWESOME! FRIED BLUE CHEESE STUFFED OLIVES

INGREDIENTS
For the Fried Olives
¼-½ cup mild Blue or Gorgonzola cheese, crumbled
40 pitted Spanish green olives, dried thoroughly
½ cup all-purpose flour
2 eggs, lightly beaten
½ cup regular Panko bread crumbs
½ cup plain breadcrumbs
¼ cup grated Parmesan cheese
Canola or vegetable oil for frying
For the Aioli Dip (garlic dip):
(Aioli can be made up to 2 days ahead. Place in a tightly covered dish and refrigerate.)
2 garlic cloves, pressed through a garlic press
¼ teaspoon Kosher salt
½ cup Greek Yogurt or mayonnaise
2 tablespoons olive oil
Juice from ½ lemon or lime
INSTRUCTIONS
(Note: The olives can be fried ahead of time and refrigerated to enjoy later. To serve, reheat in a preheated 400 degree F oven for 2-3 minutes. Watch closely.)
Gently stuff each dried olive with a small piece of Blue or Gorgonzola cheese and place on a paper towel-lined plate. Set aside until ready to fry.
In a large, heavy-bottomed stovetop pan, pour enough oil to fill the pan 1/3 of the way up the sides.Heat oil until a deep-frying thermometer reads 350 degrees F or until a cube of bread,deep-fried, takes 2 mins to brown.
While oil is heating, place the flour in a cereal-sized bowl – place the slightly beaten eggs in another cereal-sized bowl and combine the Panko breadcrumbs, plain breadcrumbs and Parmesan in another small bowl. **See Note.
When oil is ready, place 5-8 olives in the bowl with the flour. Toss gently with a slotted spoon or fork until olives are coved with flour.
Place the olives in the bowl with the beaten egg, being sure to coat each olive with egg. With a different slotted spoon (or fork), transfer the olives to the breadcrumb mixture and, using, yet, another fork, turn the olives gently to cover with the breadcrumbs.
Place the olives in the hot oil and fry for 30-45 seconds or until golden brown. Very gently stir the olives in the oil so all sides fry evenly.Transfer the olives to the paper-towel covered plate to cool a few minutes before serving. Repeat until all olives are fried.Serve with Aioli Dip.Enjoy!

Sometimes on a cold November evening, all you need is a gigantic plate of homemade vegetable and chickpea curry 🍛
I didn't actually fancy brown rice with it, so we had a garlic and coriander naan... which admittedly I didn't make from scratch 😐
Curry was made from:
💟four potatoes
💟four carrots
💟one cabbage
💟800g chopped tomatoes
💟200g dry chick peas
💟two red onions
💟a cauliflower
💟six cloves of garlic
💟150g frozen peas
💟dry spices such as garam masala, cumin, turmeric, curry powder, and a sprinkle of cinnamon
💟a shit ton of fresh coriander
