Pomegranate Chia Seed puddings are a great breakfast or even dessert. Most importantly they are super simple to make. Chia seeds are rich in omega-3 fatty acids, they are a great source of iron, magnesium, zinc, calcium and many more vitamins. And they have an amazing stomach filling effect. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pomegranates are packed with antioxidants and some research shows that eating organic pomegranate seeds and drinking pomegranate juice can increase oxygen levels to the heart (which is great for endurance athletes). ✨🌟💫

RECIPE: Pomegranate Chia Seed Pudding
(Gluten free, Dairy Free, Vegetarian)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pomegranate Seeds from one fruit
1/4 cup Chia seeds
1 cup coconut milk
1 cup natural dairy free coconut yogurt @coyo_is_coconuts
1 tbts raw honey (or maple syrup for vegan)
1/2 tsp vanilla
Pinch of sea salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix coconut milk, yogurt, vanilla, honey, sea salt and chia seeds. Store in refrigerator for 4 hours or overnight.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Assemble by layering the pomegranate seeds and pudding..in a mason jar or glass. Eat and enjoy. This batch makes 2-3 servings.

Started the day with this savory squad! 👏🏻 Five years ago, eating anything but oatmeal or pancakes or cereal for breakfast would have been unthinkable. Vegetables before noon? No way 🙅‍♀️. But now they’re on my plate almost every morning 🙋🏼‍♀️. Societal food rules are funny, aren’t they? Why are pancakes a breakfast food while grilled broccolini is a dinner food? 🤔.

Leaned alllll the way into autumn with my smoothie bowl this morning🎃

I’ve always had a touch of SAD (Seasonal Affective Disorder)— a mood disorder that manifests at around the same time each year (for me it’s fall/winter) with depressive symptoms. So while I’ve been SO pumped for chillier temps this year, I’ve also been aware that they may bring some low mood moments. Of course, therapy is my very first line of defense around any depression, but I also find that embracing the seasons as they change helps me immensely

For me, this means working as much autumnal flavor into my meals as possible (e.g. this bowl with pumpkin, sweet potato, apples, and good ol’ pumpkin spice. I topped it off with some pumpkin spice bliss balls cuz why not?!). I also like to light candles, wrap myself in cozy knits (hello chunky socks!), and have intimate indoor gatherings with friends. Do you have anything that gets you feeling especially autumnal? 🍂🍃🍁🌾#fresherica
